- Preheat oven to 325°F. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup and water. Simmer over medium-low heat until everything is well combined and heated through. Grease a 9×13-inch casserole dish. Put down a layer of crushed tortilla chips, followed by a layer of the meat/bean mixture, then half of the cheddar cheese. Repeat layers. Cover with foil and bake for 20-30 minutes, or until bubbly. Let sit for 5-10 minutes before serving. Top with sour cream and salsa.

- Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-20 minutes. Drain., Combine the sour cream, dressing, bacon, parsley and 1 cup cheese. Place potatoes in a greased 13x9-in. baking dish. Pour sour cream mixture over potatoes and gently toss. Top with 1/2 cup of cheese. Combine cornflakes and butter; sprinkle over top. Bake at 350° for 40-45 minutes.

- In a large skillet, lightly brown beef with onions and green pepper; drain. Stir in tomato sauce, kidney beans, rice, chili powder and salt. Spoon into a lightly greased 13"x9" baking pan. Bake, covered, at 350 degrees for 40 minutes. Remove from oven and arrange tamales on top of casserole. Spoon chili sauce from tamales over top; sprinkle with cheese. Return to oven and continue baking, uncovered, 20 minutes longer. Garnish with sliced olives. Use a snowflake or holly leaf-shaped cookie cutter to turn tortillas into tasty chips for dipping. Heat 1/2 inch of oil in a deep skillet over medium-high heat. Add cut-outs and cook for one minute, or until crisp, turning occasionally.
