RANDOM CHICKEN QUICK CONCOCTION

this is just something i threw together really quick with what i had on hand. You can use whatever seasonings you would like.

Random Chicken Quick Concoction image

Steps:

  • in a small baking dish put olive oil and swirl it around to coat.
  • sprinkle seasonings on both sides of chicken.
  • cube up butter and scatter it around.
  • pour in lemon juice and soy sauce.
  • sprinkle garlic over it all.
  • cover and bake at 425 for 20 minutes.

3 chicken breasts
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon lemon juice
1 tablespoon soy sauce
2 tablespoons garlic
1 teaspoon rosemary, as desired
1 teaspoon thyme, as desired
all purpose Greek seasoning, as desired
creole seasoning, as desired

Chicken leg quarters baked with rice in a creamy broccoli mixture. I dislike most convenience food recipes, but I feel that this one's a winner, as it's not only fast but healthy too!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken quarters in a 9x13 inch baking dish and bake in preheated oven, covered, for 45 minutes.
  • Meanwhile, in a large bowl combine rice and seasoning packages, water, soup, sour cream, crushed garlic, minced garlic and broccoli. Mix well.
  • Remove chicken to a platter and drain oil. Spread rice mixture in the bottom of the baking dish, then arrange chicken on top of rice. Bake uncovered for 30 to 45 minutes, or until wild rice is opened up and liquid is absorbed.

EASY GOURMET CHICKEN FOR A CROWD

I was going through all of my recipes, trying to decide which one to use to serve a crowd of people the next day. I finally could not decide between 3 recipes, so I combined the best features from each and came up with this. It was so easy to make and everyone said it was delicious. I am rewriting it here while it is fresh in my mind. Plus I will have it for future reference. Hope you enjoy!

Easy Gourmet Chicken for a Crowd image

Steps:

  • Grease either two 13x 9 pans or one large half sheet cake pan.
  • Arrange chicken tenders in pan(s).
  • Preheat oven to 325 degrees F.
  • Heat oil in large skillet.
  • Saute onions and peppers till soft.
  • Add garlic to skillet about halfway through to let flavors blend.
  • Arrange over chicken.
  • Combine soups, wine, lemon juice and spices.
  • Pour over chicken.
  • Cover and bake for 3 hours.
  • Serve over rice or noodles. I Served it with sticky rice and a salad.
  • The 'gravy' came out perfect consistency for me, but it could be thickened with a cornstarch paste or thinned by adding chicken broth.

1 garlic clove, minced

25 chicken pieces (I used breast tenders)
1 (26 ounce) can cream of mushroom soup, family size
