Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the topping by mixing together 1/4 cup brown sugar, 1/4 cup white sugar, chopped walnuts and 1/2 teaspoon cinnamon. Set aside.
  • In large bowl, mix together 1 cup white sugar, 1/2 cup brown sugar, flour, salt, baking soda and cinnamon. Make a well in the center, and pour in the oil, eggs and sour milk. Beat until smooth, then fold in chopped apples.
  • Pour batter into prepared pan. Sprinkle with topping mixture. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Steps:

  • Preheat oven to 350 degrees F(175 degrees C). Grease and flour a 9x13 inch pan.
  • Chop apples finely and place into a large bowl. In a separate bowl, beat eggs and oil together and pour over apples. Let stand while mixing the dry ingredients.
  • in a medium bowl, mix sugar, flour, 1 teaspoon salt, cinnamon, nutmeg and baking soda. Fold into apples, eggs and oil and mix well. Batter will be thick.
  • Pour into prepared 9x13 inch pan, and bake at 350 degrees F ( 175 degrees C) for 45 minutes. Once cool frost with Cream Cheese Icing.
  • To Make Cream Cheese Frosting: In a medium bowl, combine cream cheese, milk, vanilla and pinch of salt. Gradually add sugar, beating until frosting is smooth. Add additional milk, 1 tablespoon at a time, until frosting is desired consistency.

Steps:

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., Place apples in a food processor; pulse until finely chopped. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, pie spice, baking powder and salt; gradually beat into sugar mixture alternately with buttermilk. Stir in apples and walnuts., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a large bowl, beat cream cheese, butter, sugars, vanilla and pie spice until smooth. Spread frosting between layers and over top and sides of cake. Gently press walnuts into frosting on top of cake. Refrigerate leftovers.

Steps:

  • Cream the brown sugar, eggs and shortening.
  • Add the cold coffee and mix well.
  • Sift dry ingredients together.
  • Add to to the creamed mixture. Mix well.
  • Add the apples and nuts, combining well.
  • Pour into a large baking pan, 11x15 works for me. You could also use a jelly roll pan and bake it for less time.
  • Bake in a slow oven, 325 degrees for at least 1 hour.

  • CAKE: Heat the oven to 350° F. Grease an 8-inch pan and set aside. In a medium bowl, combine the flour, sugar, baking soda, salt and cinnamon.Stir with a whisk to mix everything together. In a large bowl, mix the eggs with a hand mixer til light in color and foamy. Add the oil and vanilla and beat well. Stir in the flour mixture with a spoon and continue stirring the batter til the flour disappears. Add the apples and nuts (if using) and stir to mix them into the batter. Scrape batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Place the hot cake on a wire cake. While it's still hot, prepare the glaze. GLAZE: Combine all the ingredients into a saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil. Cook for 3-5 minutes. Spoon the hot glaze over the still hot-from-the-oven cake. Let the glazed cake cool completely before serving straight from the pan.

  • Preheat oven to 350 degrees. Butter three 5 3/4-by-3 1/4-inch nonstick straight-sided mini loaf pans. Peel, core, and cut apples into 1/4-inch-thick wedges; transfer to a medium bowl. Add spices and granulated sugar; toss. Arrange in a line down center of pans so that apples stand upright.
  • Whisk brown sugar, flour, and salt in a large bowl. Add egg and butter; whisk until just combined. Stir in walnuts. Pour batter over apples in pans. Smooth top.
  • Bake until tops are deep golden brown and a cake tester inserted into centers comes out clean, 35 to 40 minutes. Let cool slightly in pans on wire racks, about 25 minutes.   • Toss apples with cinnamon and 5 tablespoons sugar; set aside.
  • Mix remaining ingredients together; blend well. Pour 1/3 of the batter into a greased and floured 10" tube pan (like a bundt cake pan); layer with half of the apples. Repeat layers and pour remaining batter on top.
