Chewy Oatmeal-Raisin Cookies image

Steps:

  • Combine the oats, flour, cinnamon, baking powder and salt in a large bowl. Beat the butter, sugar and molasses in a large bowl with a mixer on medium-high speed until fluffy, about 5 minutes. Beat in the egg and vanilla until smooth, about 2 more minutes. Reduce the mixer speed to low, add the flour mixture and beat until combined. Stir in the raisins by hand. For the best flavor and texture, cover the dough and chill at least 4 hours, or overnight.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Form the dough into 12 balls, about 2 tablespoonfuls each, and arrange 3 inches apart on the prepared baking sheets. Flatten with the back of a fork. Bake until the cookies are golden, 15 to 17 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.

I tried to combine recipes to come up with a cookie that tastes like Tate's Bake Shop cookies. The published Tate's recipe on YouTube does not taste like the cookies you buy in the store in the green bag. This is the closest I've come to simulating the oatmeal raisin flavor. This is not a thick cakey cookie but a thin, crisp, lighter version.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
  • Mix 1 cup plus 1 tablespoon flour, baking soda, baking powder, and salt in a bowl.
  • Place cold butter in a microwave-safe bowl and heat until soft, but not melted, 20 to 30 seconds. Add brown sugar and white sugar; mix with a metal whisk or spoon for 45 seconds. Add egg, vanilla extract, cinnamon, and nutmeg. Mix for 20 seconds. Pour in dry ingredients and mix for 10 to 20 seconds. Fold in oats and raisins for 30 seconds.
  • Roll cookie dough into small balls, about 1 1/2 inches in diameter. Space cookie balls 3 inches apart on the prepared baking sheets.

The Very Best Oatmeal Raisin Cookies Ever! image

Steps:

  • Preheat oven to 350°.
  • Whisk eggs in a small bowl, add 1/4 cup water, 1 tsp vanilla and raisins; mix well. VERY IMPORTANT let set on counter for at least 1 hour.
  • In another bowl, combine crisco, and sugars, mix well.
  • Gradually add dry ingredients.
  • Blend in raisin mixture -- mix well.
  • I use a cookie scoop, slightly less than 1/4 cup and place them on a greased cookie sheet. I slightly flatten them with the back of the scoop.
  • Bake at 350° for 10-12 minutes. Do not flatten cookies a lot -- just a gentle tap.other wise they will flatten out too much.
  • Baking note: please remember to reverse position of cookie sheets halfway through baking. DO NOT OVER BAKE. Cookies should be slightly golden brown around edges. Centers will look set-- let cool 1 minute on cookie sheet and then remove to wire rack to complete cool.
  • I have used this recipe for over 30 years-- always outstanding-- most important thing to remove cookies from oven before they are finished-- residual heat in cookies will complete cooking-- and result in a cookie that is not dried out.
  • I also add more walnuts, as I like lots of big nuts in my oatmeal cookies-- I have often left the egg, raisin mixture on counter, for a couple of hours while cleaning house and came back and baked marvelous cookies.

Ooey, Gooey, Chewy Chocolate Chip Cookies image

Steps:

  • Cream butter and both sugars. (I like to cream them really well so I leave the mixer on while I do the next step.).
  • Mix all dry ingredients (flour, oats, baking soda and salt) in a separate small bowl.
  • Add 2 eggs, one at a time, to creamed ingredients.
  • Add vanilla. Mix well.
  • Add dry ingredients a little at a time until it's all well incorprated. (Mixture should be really thick and not real sticky. If too sticky, add extra flour 1 T. at a time until dry enough that you can pick up the dough and roll it without it sticking to your hands.).
  • Mix in chocolate chips.
  • I roll these into about golf ball sized balls and bake at 350 for 12-13 minutes. Take them out just as they are barely beginning to brown. The key is to not overbake these! Let them cool for 2 minutes on the cookie sheet and then transfer to wire rack.
  • Hint: If your cookies spread too much while baking, try putting the dough in the fridge for a while before baking up the next batch. If that doesn't work, add a bit more flour to it.

  • Sift the flour, kosher salt, baking powder and baking soda together in a large bowl.
  • Beat the butter and brown sugar in a large bowl with an electric mixer (or using a stand mixer fitter with the paddle attachment) on medium-high speed until light and fluffy, about 3 minutes. Beat in the egg and yolk, then beat in the vanilla.
  • Reduce the mixer speed to low. Add the dry ingredients and beat until well combined, about 1 minute. Fold in the chocolate chips and walnuts, then fold in the rhubarb. Cover the bowl with a clean dish towel and refrigerate the dough for at least 1 hour or up to overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with reusable nonstick mats (or parchment).
  • Use a 1-ounce ice cream scoop to scoop the dough onto the prepared baking sheets, spacing about 2 inches apart (you should have about 10 cookies, roughly 1 1/2 ounces each, per baking sheet). Sprinkle the sea salt on top of the dough balls.
  • Bake, rotating the baking sheets from top to bottom and front to back halfway through, until the cookies are golden around the edges but still soft in the middle, 14 to 16 minutes. In my quest to make the ULTIMATE Chocolate Chip cookie, one that's healthier than most, I decided to play around with oatmeal. I was never a big fan of traditional oatmeal cookies, but grinding up the oatmeal to use in place of regular flour in cookies sounded both interesting and healthy. My biggest critics (my family) thinks these are by far the best "healthy" chocolate chip cookie they've ever had! Hope you do too!

  • Before starting, grind enough oatmeal in the food processor to make the necessary 1 3/4 cups you will need to make these cookies! Or, if you're lucky enough to find Oat Flour, use that!
  • With electric mixer, blend butter with both sugars, egg and vanilla extract.
  • Add dry ingredients to mixture- blend well.
  • Stir in chocolate chips.
  • Spoon golf ball-size balls of mixture onto prepared cookie sheets (either use cooking spray or parchment paper).
  • Bake at 265 degrees for 23 minutes (yes, I know this sounds strange, but trust me, it works!).
  • Enjoy!

Raw Oatmeal Goji Cacao Cookies image

Steps:

  • Using a food processor, blend the soaked oat groats in a food processor until the batter comes together. Put into a large bowl.
  • In the food processor pulse the almonds (or hazelnuts) until you have a course chop. Remove and add to the oat groats.
  • Add the goji berries, cacao nibs and your sweetner. Keep in mind the sweetner will affect the taste, but it probably will be good no matter which one you use.
  • Also the liquid sweetener will make this very very sticky. If you want to cut back on the sweetener that wouldn't hurt.
  • Mix all the ingredients in the bowl well.
  • Grind the cashews to a fine powder. Be careful not to let them grind too long, you don't want cashew butter.
  • Put the cashews in a flat bowl and spread it out evenly on the bottom.
  • Using a tablespoon measure scoop out some of the oat mixture and put it in the cashew powder and roll to coat.
  • When done all the little balls, put them into the dehydrator to dry. Use the plastic mesh sheets for these, not the slippery teflex ones.
  • Drying can take up to 12 hours at 110'F, depending on how thick your cookies are.
  • Pat each ball down to the desired thickness. Also how dry it is in your house can affect the drying time, so check them now and again during the first 6 hours.
  • At about 6 hours flip the cookies and dry another 6 hrs if necessary.
  • These look so pretty with the bright goji berries and the dark cacao nibs. Its very festive! You could also add some dried cranberries/blueberries or whatever you have in the pantry.

Steps:

  • Put oat groats in food processor and grind until fine. Transfer to a mixing bowl.
  • Put almonds in food processor and pulse a few times to chop them until just coarsely chopped. Transfer to bowl with the oats.
  • Add raisins and agave nectar to bowl and mix everything well.
  • Grind cashews in coffee grinder, and use this to coat your palms as you handle the cookie batter.
