CLASSIC FRENCH TOAST
There are just a few keys to making great French toast: Use stale bread (fresh tends to fall apart), make sure the bread is sliced at least 3/4-inch thick (it helps maximize soaking for a custardy interior) and watch your soaking time (a shorter time equals a slightly drier toast, a longer time yields a more custardy one).

- Preheat the oven to 300 degrees F. Lay the bread slices in one layer (it's OK if they overlap a little) on a baking sheet. Bake the slices (to dry them out a little) for 6 minutes, then flip and bake for 6 minutes more. Set aside to cool. Reduce the oven temperature to 200 degrees F.
- Whisk together the eggs, half-and-half, granulated sugar, cinnamon, vanilla and salt in a large casserole dish.
- Heat a large nonstick skillet over medium-low to medium heat. Place 2 slices of bread in the egg mixture. Let the bread completely soak in the egg mixture on both sides, about 30 seconds to 1 minute total, checking after 15 seconds. (Bread should feel heavy and soaked through but hold its shape without breaking apart.) Melt a tablespoon of butter in the skillet and add the 2 soaked slices; cook until the outside is golden brown and crisp and the inside is cooked through, 4 to 5 minutes per side. You will need to watch and adjust the temperature between medium and medium-low if the bread is browning too quickly or not browning fast enough. Keep finished French toast slices warm on a rack nested in a rimmed baking sheet in the oven. Repeat with the remaining slices.
- Serve with a dusting of confectioners' sugar and drizzle of maple syrup.
REAL FRENCH TOAST BAKE BY RACH'S BLOG
Last weekend I made a French Toast Bake for a bridal shower brunch. I love this recipe because it is so easy (Fia could do this by herself), economical (most expensive ingredient was the Texas Toast at $2), & oh-so-delicious! The best part is that it is made the day before so there is no fuss on the day you consume it....perfect for a Sunday afternoon or brunch.

Steps:
- Melt butter in microwave & add brown sugar -- stir till mixed.
- Pour butter/sugar mix into bottom of 9 x 13 pan -- spread around (this is where I would all the sliced apples).
- Beat eggs, milk, & vanilla, & Cinnamon.
- Lay single layer of Texas Toast in pan.
- Spoon 1/2 of egg mixture on bread layer. (Then I would spread the Cream cheese and Powdered sugar mixture on the bread.).
- Add 2nd layer of Texas Toast.
- Spoon on remaining egg mixture and sprinkle a little Cinnamon on top.
- Cover & chill in fridge overnight.
- Bake at 350 for 45 minutes (covered for the first 30 minutes).
- Sprinkle with powdered sugar.
- Serve with warm maple syrup (I don't do the syrup part).

- Whisk eggs, milk, vanilla extract, cinnamon, allspice, and salt together in a large bowl. Place bread slices in egg mixture and soak, turning to coat, until bread is completely saturated.
- Melt butter in a cast-iron skillet over medium heat. Working in batches, cook bread in hot butter until golden, about 3 minutes per side. Transfer toasted bread to a baking sheet.
- Bake toast in the oven until outside is crisp and slightly puffed, 12 to 15 minutes.

BAKED FRENCH TOAST

- Cut bread into 1-in.-thick slices. Arrange in a single layer in a greased 13x9-in. baking dish. Lightly beat next 6 ingredients; stir in milk and cream. Pour egg mixture over bread, turning once to coat. Refrigerate, covered, overnight., Preheat oven to 375°. Turn bread again to coat. For topping, combine flour, brown sugar, butter, cinnamon and, if desired, nutmeg. Sprinkle flour mixture over bread., Bake, uncovered, until a knife inserted in center comes out clean and topping is golden brown, 40-45 minutes. Let stand 10 minutes before cutting. Top with blueberries or raspberries; sprinkle with confectioners' sugar.

BAKED FRENCH TOAST

Steps:
- Beat eggs and milk together and set aside.
- Melt butter and spread evenly around a 9x13 pan.
- Sprinkle brown sugar& cinnamon evenly in bottom of pan.
- Next, stack 2 layers of bread in pan (I only use one layer if using Texas toast).
- Pour egg & milk mixture over the layered bread. (Can use less of this mixture if you'd like).
- Bake uncovered for 45 minutes at 350 degrees.
- NOTE: Can be made the night before and baked the next morning.

Steps:
- Adjust oven racks, one on lowest position and the other in the middle position.
- Preheat oven to 425.
- Grease 2 cookie sheets with 2 Tbsp.
- of the above butter.
- Beat eggs, milk, powdered sugar, vanilla and cinnamon.
- Dip bread in the egg mixture and place on cookie sheets.
- Cut remaining butter into pieces and scatter over bread.
- Place on racks, bake for 7 minutes, switch cookie sheets and continue to bake for 8 minutes.
- Sprinkle with a bit of powdered sugar when done.
