Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Heat the olive oil in a skillet over medium heat, and cook the onion until tender. Mix in garlic, and cook until heated through. Mix in red beans, tomatoes, and red bell pepper. Season with basil, oregano, salt, and pepper. Continue cooking 10 minutes, stirring occasionally.
- Melt the butter in a saucepan over medium heat, and gradually mix in flour until smooth. Slowly stir in the milk. Mix in Parmesan cheese, and continue to cook and stir until slightly thickened.
- Spread 1/2 the red bean mixture in a 9x9 inch casserole dish, and top with 2 lasagna noodles. Layer with remaining bean mixture and remaining noodles. Cover with the sauce, and top with Gruyere cheese.
- Bake 20 minutes in the preheated oven, or until lightly browned.

- In a large skillet, cook the ground beef over medium-high heat until evenly brown. Drain off excess fat. In a large bowl, combine the cooked beef, refried beans, oregano, cumin and garlic powder.
- Place four of the uncooked lasagna noodles in the bottom of a 9x13 inch baking dish. Spread half of the beef mixture over the noodles. Top with 4 more uncooked noodles and the remaining half of the beef mixture. Cover with remaining noodles. Combine the water and the salsa in a medium bowl, and pour over all.
- Cover tightly with foil. Bake at 350 degrees F (175 degrees C) for 1 1/2 hours, or until noodles are tender.
- In a medium bowl, combine the sour cream, green onions and olives. Spoon over casserole, and top with shredded cheese. Return to the oven, and bake for an additional 5 to 10 minutes, or until cheese is melted.

MEXICAN LASAGNA LITE
This is a lower-fat version of a popular Tex-Mex style casserole. You can increase or decrease the number of tortillas used in order to fit your tray. I'm obviously using low- and no-fat ingredients which can be substituted successfully with full fat versions with great results. - Preheat the oven to 375 degrees F (190 degrees C).
- Brown ground turkey in a skillet over medium heat, breaking it up into crumbles as it cooks, about 10 minutes. Stir in taco seasoning mix and water, bring the mixture to a boil, and reduce heat to low. Simmer turkey mixture until thickened, about 5 minutes. Stir in chopped green chilies and remove from heat.
- Spread a scant 2/3 cup enchilada sauce evenly over the bottom of an 8x10-inch baking dish; top sauce with 4 tortillas, overlapping if necessary. Spread tortillas with half the sour cream, half the refried beans, half the turkey mixture, and 1/3 the cheese blend. Top with another 2/3 cup enchilada sauce and 4 more tortillas. Firmly press down on tortillas to compact the layers beneath.

- Bake casserole uncovered in the preheated oven until the cheese topping is melted and bubbling and casserole is hot, about 20 minutes.

- Mix beans with juice from one can of tomatoes and 2 tablespoons taco sauce.
- Mix remaining taco sauce with remaining tomato juice and set aside.
- Spread 1/4 of taco sauce mixture in bottom of a 9x13 pan.

- Noodles should be completely covered.
- You will have a sloppy mess.

- In a large, heavy pot, combine the beans, bay leaf, and enough water to cover by 1 to 2 inches. Bring to a boil. Lower the heat and simmer uncovered, stirring occasionally, until the beans are very tender, 1 1/2 to 2 hours, adding more water as necessary to keep covered. When the beans are soft, mash in the pot with a potato masher or the back of heavy wooden spoon. Remove from the heat.
- In a large, heavy skillet, heat the bacon fat over medium-high heat. Add the onions and cook, stirring, until soft, 4 to 6 minutes. Add the garlic, jalapeno, chili powder, cumin, salt, and cayenne, and cook, stirring, until fragrant, 45 seconds to 1 minute. Add the beans and any cooking liquid from the pot, and the oregano, and stir to combine. Cook, stirring with a heavy wooden spoon, until the mixture forms a thick paste, 15 to 20 minutes, adding water a bit at a time to keep the beans from drying out too much.
- Remove from the heat and transfer to a decorative bowl. Sprinkle with the cheese and cilantro, and serve.

- Preheat the oven to 350°F (180°C) and grease a 9 x 13-inch (22x33 cm) baking dish with cooking spray.
- Heat the olive oil in a medium pan over medium-high heat. Add the green pepper and onion and sauté until soft and the onion is translucent, about 6 minutes.
- Add the ground turkey and break up with a wooden spoon. Cook for another 4 minutes, or until it is no longer pink. Add the water and taco seasoning and bring to a boil. Reduce the heat to medium-low and simmer for 2 minutes.
- Stir in the black beans, corn and fire-roasted tomatoes. Continue to simmer, uncovered, for 10 minutes, until thickened, then remove the pan from the heat.

- Cover the baking dish with foil and bake for 25-30 minutes, or until the lasagna is warmed through and the cheese is melted and bubbling. Broil on high for 2-3 minutes, until dark golden brown and bubbling.

- Preheat oven to 350°F
- Lightly grease a 13 x 9 inch baking pan and set aside.
- Bring a large pot of lightly salted water to a boil and cook noodles until al dente, according to package directions.
- While water is coming to a boil, in a small bowl, blend the ricotta, spinach, basil, oregano, salt, pepper and egg.
- Spray a large skillet with cooking spray or use a tsp or so of oil and heat over medium heat.

I wanted to do something different with the ground meat I had in my freezer. After finding the no-bake lasagna noodles in my pantry and salsa in my fridge, I knew I wanted to try a Mexican-style lasagna! I used my immersion blender on the salsa and on the refried beans so it would spread smoother across the noodles.

- Brown and break up the ground meat, seasoning half way through with taco seasoning and half of the lime juice. Drain on plate covered with a paper towel. Add the remaining lime juice to the salsa for extra flavor.
- **You can layer the lasagna however you choose, but here is how I do it....
- Start with about 4 tablespoons of salsa and spread over the bottom of the casserole dish. Layer the noodles overlapping across casserole dish. Spread a thin layer of refried beans with a large spoon and sprinkle evenly with corn, black olives, cooked ground meat, green onions and shredded sharp cheddar cheese. Add your next layer of noodles and spread on the refried beans. Sprinkle more corn, ground beef, green onion, black olives and cheese. Add another layer of noodles and spread with a few tablespoons of salsa. Sprinkle remaining ground meat and only a small amount of corn, cheese and green onion. Add the last layer of noodles and spread with salsa. Top with a generous amount of cheese and sprinkle a few black olives and green onions. Cover with foil and bake at 350 until noodles are tender, about 40 minutes. Remove foil and bake until cheese begins to brown. Cool before slicing. Add a nice dollop of sour cream and ENJOY!

- Spray 15x12 inch sheet of foil and 13x9 inch glass baking dish with cooking spray.
- In large bowl, mix tomatoes, salsa and chicken. In medium bowl, mix refried beans and sour cream.
- Spread about 1 1/4 cups chicken mixture in bottom of baking dish. Top with 4 uncooked noodles, breaking to fit if necessary. Spread with half of bean mixture and 1 1/2 cups chicken mixture. Sprinkle with 1 cup of the cheese, and hald of the onions and olives.
- Repeat noodle, bean, chicken and cheese layers once. Top with remaining 4 noodles, chicken, onions, olives and cheese. (Be sure top noodles are covered.) Cover with foil; refrigerate at least 8 hours or overnight.
- Heat oven to 350*. Bake covered lasagna 50 minutes. Uncover baking dish; bake 18 to 22 minutes longer or until bubbly and thoroughly heated. Let stand 10 minutes before serving.Sprinkle with cilantro. If desired, garnish each serving with sour cream, chopped tomato and shredded lettuce.
- NOTE: If you don't have the tomatoes with green chiles, use a 4.5 oz can of chopped green chiles and plain canned diced tomatoes instead.
BLACK BEAN LASAGNA II
Lasagna with a Southwest twist. This can be frozen unbaked and kept for up to a month. Simply thaw in refrigerator overnight and bake as directed. Tastes even better reheated the second day!

- Heat the oil in a large frying pan, and add the chopped vegetables. Cook for a few minutes over a medium heat, until fairly soft. Add the black beans, refried beans and spices, and season to taste. Depending on the kind of refried beans you used, you may want to add additional spices or seasonings at this point (the beans I used were already fairly spicy). Mix thoroughly - you may need to add a dash of water if the mixture seems too thick. You could also add a tin of tomatoes if you prefer a saucier lasagne.
- Melt the butter in a small saucepan, and add the flour. Mix well, and cook over a low heat for 1-2 minutes. Add the milk a little at a time, stirring the mixture until smooth each time before adding more. When you have added all of the milk and you have a smooth sauce, add the grated cheese and plenty of salt and pepper. Cook for another minute or two, to melt the cheese.
- To assemble the lasagne, start by adding about 1tbsp of cheese sauce to the base of your baking dish, and spread it around - this helps to prevent the lasagne from sticking. From this point onwards, it doesn’t really matter what order you layer up your sauce, beans and pasta. I layered up pasta, then beans, then sauce, until all the ingredients were used. I finished the lasagne with the last of the cheese sauce, and sprinkled some extra grated cheese on top.
- Cover the lasagne loosely with foil, and bake for around 1 hour at 190°C (Gas Mark 5 / 375°F). When the lasagne sheets are nearly soft (check them with a sharp knife), remove the foil, and bake for a further 20 minutes or so, to crisp up the top. Allow to stand for 5 minutes before cutting, and serve topped with fresh coriander (cilantro) if desired.
