Steps:

  • For the sauce: In a food processor, combine the tomatoes, onions, garlic, capers, chile, sugar, paprika, and salt. Process until slightly chunky. Pour the sauce into a medium saucepan and bring to a simmer over medium heat. Cook for 25 minutes until thickened. Season with salt and smoked paprika, to taste.
  • For the steaks: Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the steaks on both sides with olive oil. Season on both sides with salt and pepper. Grill for 5 to 6 minutes each side for medium-rare. Let the steaks rest for 5 minutes.
  • Slice the steaks across the grain into 1/4-inch thick slices and serve with the sauce.

1 (28-ounce can) crushed tomatoes

  • Preheat a panini maker.
  • For the vegetables: In a large nonstick skillet, heat the oil over medium-high heat. Add the garlic, onions, peppers, herbes de Provence, salt and pepper. Cook, stirring occasionally, until the vegetables are soft, 8 to 10 minutes. Remove the vegetables and set aside.
  • For the steak: In the same skillet, heat the oil over high heat. Add the steak and sprinkle with the salt and pepper. Cook, stirring constantly, until the steak is cooked through to desired doneness, 2 to 3 minutes.
  • For the panini: Spoon 2 tablespoons of marinara sauce onto the bottom of each roll. Add the arugula and top with the cooked vegetables. Arrange the steak on the vegetables and place a slice of cheese on top. Place the tops on the rolls and cook in a panini maker until the cheese has melted, about 5 minutes.

Steps:

  • Thirty minutes before grilling the steaks, remove them from the refrigerator and allow them to come to room temperature. Heat a grill with coals.
  • When the coals are hot, spread them out in the grill in one solid layer. Pat the steaks dry on both sides with paper towels and sprinkle them liberally with salt and pepper. Place the steaks on the hot grill and sear them on each side for 2 minutes, until browned. Brush each side lightly with olive oil. Place the lid on the grill and allow the steaks to cook for another 3 to 4 minutes, until they are cooked rare, or 120 degrees F on a meat thermometer. (To test the steaks, insert the thermometer sideways to be sure you're actually testing the middle of the steak.) Remove the steaks from the grill, place them in one layer on a platter and cover tightly with aluminum foil. Allow the steaks to rest at room temperature for 15 minutes.
  • For the stilton sauce, place the stilton cheese in the bowl of a food processor fitted with a steel blade and blend until finely minced. Add the cream cheese, mayonnaise, sour cream, scallions, 1 teaspoon salt, 1/2 teaspoon pepper, and Worcestershire sauce. Process until smooth.
  • Slice the steak and serve with the stilton sauce.

4 (1 1/4-inch-thick) rib-eye steaks, either boneless or bone-in
Kosher salt and freshly ground black pepper
Good olive oil
4 ounces stilton cheese, crumbled
8 ounces cream cheese, at room temperature
1/2 cup good mayonnaise
1/2 cup sour cream
1 tablespoon chopped scallions, white and green parts
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 teaspoon Worcestershire sauce

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F.
  • For the rub: In small bowl, combine the sugar, chili powder, smoked paprika, salt and pepper.
  • Pour the beef broth into a 9- by 13-inch baking dish. Using a paring knife, score the surface of the meat all over. Massage the rub into the meat. Cover the dish tightly with foil and roast until very tender, 3 1/2 to 4 hours, adding water 1/2 cup at a time if the roasting juices start to dry up.
  • For the sauce: In a food processor, combine the garlic, celery, onion, tomato sauce, vinegar, maple syrup, mustard, smoked paprika, chili powder and salt. Blend for 1 to 2 minutes until smooth, scraping the side of the food processor bowl as needed with a spatula. Transfer the sauce to a medium saucepan. Bring the mixture to a simmer over medium heat. Cook, stirring occasionally, until thick, about 30 minutes.
  • Brush 1/3 cup of the sauce over the surface of the brisket.
  • Slice the brisket into 3/4-inch pieces and arrange on a serving platter. Serve the extra sauce alongside.

2 tablespoons dark brown sugar
2 tablespoons chili powder
2 teaspoons smoked paprika
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
One 14.5-ounce can beef broth
One 3- to 3 1/2-pound beef brisket
2 cloves garlic, smashed and peeled
1 stick celery, coarsely chopped
1 medium onion, coarsely chopped
One 14.5-ounce can crushed tomatoes
2 tablespoons apple cider vinegar
2 tablespoons maple syrup
1 tablespoon Dijon mustard
1 tablespoon smoked paprika
2 teaspoons chili powder
1/2 teaspoon kosher salt

BRAAI-RUBBED RIB-EYE STEAKS WITH TOMATO SALAD

In South Africa, Braai is both a cooking method (outdoors, over a fire) and the spice rub that goes on whatever you're cooking over that fire. While everyone makes their Braai spice rub a little differently, I've added smoked paprika to this one to replicate the smoky flavor of cooking over a fire even if you're indoors on a grill pan.

Steps:

  • For the steaks: Set the steaks on a plate and season all over with 1 teaspoon kosher salt. Rub the Braai Spice Mix on both sides of the steaks. Let sit at room temperature for 15 to 20 minutes.
  • Heat a large cast-iron skillet over medium-high heat. Brush lightly with olive oil. Set the steaks in the skillet and cook undisturbed until well browned on the first side, about 2 minutes. Flip the steaks and cook until seared on the second side, about 2 minutes more. Lower the heat to medium and continue to cook until done to your liking, about 2 minutes more for medium rare. Remove the steaks to a cutting board and let rest 10 minutes.
  • For the tomato salad: Combine the tomatoes, parsley or cilantro, scallions and ginger in a medium bowl and toss to combine. Drizzle with the lime juice and olive oil and season with 1/2 teaspoon salt. Toss well.
  • Thinly slice the steak against the grain. Serve with the tomato salad alongside.
  • Combine the coriander, paprika, black pepper, garlic powder, onion powder, allspice, cayenne and nutmeg in a small skillet. Toast over medium-low heat, stirring occasionally, until lightly toasted and aromatic, 2 to 3 minutes. Let cool in the pan. Stir in the brown sugar. The spice mix will keep for several weeks in an airtight container in your pantry. Makes about 1/2 cup.
