Steps:

  • In a small saucepan, combine the brown sugar, mayonnaise and chili sauce. Cook and stir over medium heat until mixture comes to a boil; set aside., Place a water chestnut and pineapple chunk on each piece of bacon; roll up bacon and secure with a toothpick. Place on a broiler pan. Broil 4-5 in. from the heat 4-5 minutes on each side or until bacon is crisp. Serve with sauce.

Steps:

  • Marinate chicken livers and bacon in soy sauce 4 hours in refrigerator. Toward end of marinating period, preheat oven to 400 degrees. Skewer liver, chestnut, and bacon, and dip in brown sugar. Arrange rumaki on wire rack over shallow roasting pan and bake about 30 minutes, turning occasionally, until bacon is crisp.

Rumaki first became popular during the "Tiki Bar" era of the mid-20th century -- a trend that managed to stick around for decades, because trends used to be able to do that. Nowadays food trends can last for mere hours, but with enough support we can bring rumaki back into the spotlight for weeks, or maybe even months! After all, a dish that's this good is never really out of style.

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the brown sugar, soy sauce, canola oil, sesame oil, reserved pineapple juice, vinegar, black pepper, garlic and grated ginger in a bowl. Add the water chestnuts and marinate for 2 hours at room temperature.
  • Cut the pineapple chunks in half and set aside. Cut the bacon strips in half and set aside. Cut the chicken livers into 1/2-inch pieces and set aside.
  • To assemble: Lay out a half strip of bacon. Put a slice of pineapple at one end, topped by a slice of water chestnut and a piece of chicken liver. Roll up the bacon and seal with a toothpick. Repeat until all the ingredients are used.
  • Place on a parchment-lined sheet pan and brush with the marinade. Bake, brushing with marinade every 10 minutes, until the bacon is crisp and the livers are just cooked but still slightly pink, 35 to 40 minutes. The last 10 minutes, brush with the marinade and sprinkle with the turbinado sugar.

  • 1. Preheat oven to 400^. Lay bacon on a cookie sheet and bake until cooked but not crisp, about 10 minutes. Remove pan from oven and drain off any fat, then blot bacon and pan with paper towels.
  • 2. Place 1 water chestnut in the middle of each piece of bacon top each with half a chicken liver. Place a drop of soy sauce, a pinch of ginger, and a sprinkle of brown sugar on top of each liver. Steps:

  • 1. Preheat oven to 400 degrees. Cover large baking sheet with aluminum foil and spray with nonstick cooking spray. I use olive oil.
  • 2. Combine soy sauce, Worcestershire sauce, ginger, garlic powder, water, honey and ketchup in small saucepan. Simmer over low heat for 10 minutes.
  • 3. Wrap one piece of red pepper, one water chestnut, one piece of green onion and one piece of beef with half slice of bacon. Secure with toothpick. Repeat until all are wrapped.
  • 4. Place on cookie sheet and bake ten minutes. Remove from oven, gently turn and baste with soy/ginger marinade. Place back in oven for 8-10 minutes. Remove and baste. Repeat until bacon is good and crispy; approximately 30 minutes.
  • 5. NOTES For added crispiness you can turn on the broiler the last minute of cooking but broilers are unpredictable to keep a close eye on them.

Steps:

  • Cut bacon slices in half and lay out individually.
  • in the center of each slice place a chestnut.
  • On each chestnut, place a piece of liver.
  • Fold up each end of bacon strip over chicken liver and chestnut, secure with toothpick.
  • Combine remaining ingredients in large dinner plate or deep pie dish.
  • Marinate for several hours in the fridge, turning frequently.
  • Place bundles on broiler pan and broil 5-7 minutes, turning once.

Steps:

  • Place bacon strips on frying pan with low flame and cover pan.
  • Melt some butter or margarine, and add the soy sauce, ginger, sherry and garlic in another frying pan with a container of chicken livers on a medium flame.
  • DO NOT ALLOW THE BACON TO GET FULLY DONE, ONLY PARTIALLY DONE.
  • While bacon is still soft and only partially done, remove and place strips onto a paper towel to slightly cool.
  • When livers are done on both sides, remove from flame and also set aside onto paper towel to slightly cool.
  • Slice the chicken livers into somewhat flat pieces.
  • Take a piece of chicken liver and a slice of water chestnut and wrap either 1/2 strip of bacon or a whole strip of bacon around the liver and water chestnut, securing it with a wooden toothpick.
  • Place the Rumaki onto a cookie sheet, and continue this same procedure, until the cookie sheet is filled and the livers and bacon are gone.
  • Set the cookie sheet with all of the Rumaki aside.
  • About 20 minutes before company arrives, preheat oven to 450 degrees.
  • About 15 minutes before company arrives, place the cookie sheet with the Rumaki into the oven for 10 minutes, and then raise the oven to broil for about 3 to 5 minutes.
  • Remove from oven and serve on a hot plate.
  • Leave the toothpicks in place so they can pick it up by the toothpicks.

Super Easy Bacon Wrapped Water Chestnuts (Modified Rumaki) image

Steps:

  • Open can of water chestnuts and drain. Place the water chestnuts on paper towel and let air dry. If you're in a hurry, you may also pat them dry with paper towel.
  • Cut each strip of bacon in thirds.
  • Wrap bacon around water chestnut and secure with toothpick. Repeat until all are wrapped.
  • Place bacon-wrapped water chestnuts on a cookie sheet sprayed lightly with cooking spray or lined with tin foil for easy clean up. If using tin foil, go ahead and spray the tin foil with cooking spray, as well.
  • Brush each bacon-wrapped water chestnut with your favorite barbeque sauce. **OR** If you are lazy, like me, dump the barbeque sauce into a bowl and just dip each bacon wrapped water chestnut into the barbeque sauce and shake off excess.
  • Place on top rack in oven under the broiler. Broil for about 10 minutes. Take them out of the oven and turn them all over. Brush again with barbeque sauce, if desired. Place under the broiler again for about another 10 minutes. You should watch these pretty closely to be sure not to burn. You are looking to cook the bacon through until it crisps.
  • Serve and enjoy!

Traditionally, Rumaki is bacon wrapped Chicken Liver. Some people do not like chicken liver (or any organ meat), so this recipe allows to you make 3 different versions to satisfy nearly everyone: approximately 24 with liver, and 24 with either a pineapple chunk or a water chestnut, and all use the same dipping sauce.

Steps:

  • 1. Preheat oven to 450 degrees. Soak approximately 50 toothpicks in water. Clean chicken livers and remove stringy or fatty parts. Cut each liver into 3 pieces. You should have approximately 24 pieces of liver. Cut bacon strips in half (if extra long bacon, cut in thirds). Cut water chestnuts in half.
  • 2. Assemble Rumaki: Wrap each piece of liver with a strip of bacon, securing with a toothpick. In about 1/3 of them, add a piece of water chestnut before securing with the toothpick. In one third of them, add a small chunk of pineapple instead of the water chestnut. With the remaining pieces of bacon, wrap a pineapple chunk (alone) or a water chestnut alone and secure each with a tooth pick.
  • 3. Spray the rack of a broiler pan with non-stick cooking spray. Arrange rumaki on rack and cook in a hot oven for approximately 30-40 minutes, turning once or twice to be sure bacon is crispy all over. When done, remove to paper towels to drain for a few minutes before arranging on platter. I like to use a paper doily or two to line the platter, as it also will soak up some of the drippings. Arrange Rumaki into two sections, grouping those with liver together, and those with only water chestnuts or pineapple chunks together.
  • 4. Stir together Dipping Sauce ingredients -except liquor- in small saucepan, and put on medium - low heat. Cook until sugar and preserves are completely melted. Simmer slowly for about 20 minutes to reduce liquids slightly. Set aside until Rumaki comes out of the oven.
  • 5. Add whiskey or bourbon to dipping sauce and bring to a rapid boil for approximately 5 minutes, stirring constantly to prevent boiling over. Cool for 10 minutes, then pour into small serving dish. I use a footed glass bowl that fits into the center of the platter holding the rumaki.

RUMAKI - 3 WAYS
1 lb chicken livers
1 can(s) whole water chestnuts (drained)
9 pineapple tidbits (fresh or canned) or 2 slices of pineapple cut into 12 chunks
1 lb bacon, cut in thirds
wooden round (not flat) toothpicks
DIPPING SAUCE
1/2 c pineapple juice (may use juice drained from canned pineapple)
1 1/2 Tbsp soy sauce or teriyaki sauce
1/2 c brown sugar firmly packed
1/2 c apricot preserves
1/4 tsp ground ginger
1 Tbsp minced garlic
1/4 c whiskey or bourbon

I substitute Dates for the Chicken Livers. Thus the title "Mock Rumaki". They go fast.

  • 1. Cook bacon until 2/3 to 3/4 done, then cut strips into thirds. Soak Tooth Picks in Water.
  • 2. Open the pitted Dates enough to stuff with a small wedge of Pineapple cut from the rings.
  • 3. Wrap with prepared Bacon and secure with Tooth Picks you have soaked in water. Dip and roll in the Brown sugar. Place on foil lined cookie sheet or pizza platter.
  • 4. Bake at 350 degrees for 30/40 minutes. Turn pieces half way through cooking to assist in preventing sticking. Brown Sugar and Sugar in Dates is prone to sticking.
  • 5. When Bacon appears crisp remove from oven and allow to cool for a few minutes. Scrape from foil with spatula if necessary.
  • 6. These go fast and are a welcomed surprise to guests. My sister is renowned for her Rumaki at our Holiday Gatherings. So, I got a sideways glance when I first arrived with these. All was forgiven when she realized I wasn't a Total Copycat.

  • In a medium bowl, mix together teriyaki sauce, garlic and ginger root. Place chicken livers and water chestnuts in the mixture. Marinate in the refrigerator at least 2 hours.
  • Heat oil in a large, heavy saucepan to 375 degrees F (190 degrees C).
  • Wrap each half slice of bacon around one chicken liver half and a slice of water chestnut. Secure by skewering with small skewers or toothpicks.
