ROSEMARY-GINGER COCKTAIL

Rosemary and ginger give both a piney taste and a little bite to these gin cocktails.

Steps:

  • Bring all syrup ingredients to a boil in a small saucepan over medium heat. Boil, stirring until sugar has dissolve, about 1 minute. Remove from heat. Let stand, covered, 1 hour at room temperature.
  • Strain through a fine-mesh sieve, pushing down on solids to extract as much liquid as possible. Refrigerate until ready to use.
  • Combine gin, 1 cup of the rosemary-ginger simple syrup, sparkling water, and lime juice in a cocktail shaker. Add ice cubes and shake until well-chilled. Strain 3/4 cup each into 8 glasses and serve.

CRANBERRY-ROSEMARY PROSECCO FLOAT

This makes such a festive cocktail to kick off your Thanksgiving cocktail hour! This recipe is for one, but line up flutes for all your guests and it's easy to make as many as you need. Make the rosemary simple syrup up to a week in advance. The rest of the cocktail is together in minutes.

Cranberry-Rosemary Prosecco Float image

Steps:

  • Combine water, sugar, and rosemary leaves in a small saucepan. Bring to a boil, stirring until sugar dissolves. Reduce heat to low; let simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes.
  • Strain syrup into a sterilized glass jar. Cover and refrigerate until completely chilled, at least 20 minutes.
  • Drop sorbet into the bottom of a champagne flute. Pour 1 fluid ounce rosemary syrup and gin on top. Pour in Prosecco very slowly so that it does not overflow. Garnish with 1 cranberry and sprig of rosemary.

Steps:

  • Bring sugar and water to a simmer in a small pan over medium heat, stirring occasionally, until sugar is dissolved. Turn off heat, transfer to a bowl, and let syrup cool completely before using, 15 to 20 minutes.
  • Pour 3/4 fluid ounce simple syrup, bourbon, lemon juice, bitters, and egg white into a large cocktail shaker. Cover with a smaller cocktail shaker, or top, and give the cocktail a "dry shake" without ice, about 30 seconds.
  • Add 3 ice cubes to the mixture, cover, and shake vigorously until the shaker is very cold and the outside is frosty, about 45 seconds. Uncover and strain into a rocks glass containing one large ice cube. Serve immediately.

Add egg white, lemon zest, mezcal, lemon juice, and agave nectar. Cover cocktail shaker; shake vigorously (without ice) until egg white is emulsified, about 20 seconds. Carefully uncover (shaker will be quite full) and add ice just to fill. Cover and shake until egg white is very frothy and cocktail is cold, about 30 seconds.
  • Set chilled glasses next to each other and double-strain cocktail into glasses, dividing evenly. Top off each drink with 3 oz. club soda and garnish with a rosemary sprig.
