ROSé ROYALE
This is the best-selling summer cocktail at Ralph Lauren's Polo Bar in Manhattan, where it is regarded as "summer in a glass." A critical ingredient is French grapefruit liqueur, or pamplemousse, a relatively new spirit that contributes aroma, a touch of sweetness and a bitter edge, even in a small dose. It marries superbly with rosé wine. Consider adding a splash of it to a glass of rosé Champagne.

Steps:
- In a large wine glass, combine the grapefruit liqueur and Royal Combier. Add the wine and Champagne. Add a few ice cubes and stir.
- Twist the grapefruit peel over the drink to release oils, then drop it into the cocktail.

- Make a rose syrup by bringing the water and sugar to a boil in a small saucepan. Reduce heat and let the mixture simmer, stirring occasionally, until the sugar is completely dissolved.
- Remove from heat and allow to come to room temperature. Add the rose water to the simple syrup and stir to combine. Chill.
- To serve, place 2t* of rose syrup in the bottom of a champagne coupe. Add 6oz of sparkling wine to the glass. Garnish with a single rose petal in each glass. Serve immediately.
