Easy Garlic Knots image

Steps:

  • Sprinkle flour lightly over your work surface. Roll the pizza dough into a disc and sprinkle both sides lightly with flour. Cut the dough into 10 equal pieces.
  • Roll one piece of dough into an 8-inch log. Tie a knot in the center of the log (by creating a loop in the center of the log and threading one end of the log through the loop to form a tight knot). Place the knot into an 8-inch cast-iron skillet. Repeat this process with the remaining 9 pieces of dough. Spread a clean towel over the skillet and place in a warm area to proof for 1 to 2 hours. After proofing, the knots should look slightly puffed.
  • Preheat the oven to 400 degrees F.
  • In a small bowl, stir together the melted butter, olive oil, kosher salt, garlic powder and fresh garlic. Generously brush each knot with the butter mixture, being careful to leave the fresh garlic at the bottom of the bowl.
  • Bake the knots for 25 to 30 minutes. Carefully remove the skillet from the oven and pour the remaining garlic butter over the partially baked knots. Return the skillet to the oven and bake until the knots are golden brown and the garlic is caramelized, 15 minutes more.
  • Sprinkle the knots with the Parmesan cheese, parsley and sea salt. Serve immediately.

All-purpose flour, for rolling dough
1 pound fresh pizza dough
3 tablespoons salted butter, melted
3 tablespoons extra-virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon garlic powder
3 cloves garlic, minced
1/4 cup freshly grated Parmesan
2 tablespoons fresh flat-leaf parsley, chopped
1 tablespoon flaky sea salt

Steps:

  • Prepare Basic Pizza Dough as recipe instructs below and set aside to rise.
  • Combine butter and garlic in a small saucepan over low heat. Cook until the garlic is fragrant and tender, 3 to 4 minutes. Cover, remove from the heat and set aside. Keep warm.
  • Preheat oven to 375 degrees F and lightly grease 2 large baking sheets. Set aside.
  • Remove risen dough from the bowl and place on a lightly floured surface. Using a lightly floured rolling pin, roll dough out into a large rectangle, about 16 by 12 inches. Brush the dough lightly with the olive oil. Cut the dough in half lengthwise and then cut crosswise into strips about 1 1/4 inches wide. Tie each strip loosely into a knot, stretching gently if necessary, and place on prepared baking sheets about 2-inches apart. Sprinkle the tops of the knots with salt. Cover with plastic wrap or a clean kitchen towel and let rise in a warm, draft-free place for about 30 minutes.
  • Bake until golden brown and risen, about 20 minutes. Transfer to a large mixing bowl and toss gently with the warm garlic butter, Pecorino Romano cheese, and parsley. Add salt to taste if necessary. Serve immediately.
  • In a large bowl, combine the water, yeast, honey, and 1 tablespoon oil, stirring to combine. Let sit until the mixture is foamy, about 5 minutes.
  • Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until the dough is smooth but still slightly sticky. You may not need all of the flour. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
  • Oil a large mixing bowl with remaining olive oil. Place the dough in the bowl, turning to coat with the oil. Cover with plastic wrap and set in a warm place, free from drafts until doubled in size, about 1 1/2 hours.

Basic Pizza Dough, recipe follows
1/2 cup unsalted butter
3 tablespoons minced garlic
1 tablespoon olive oil
1 teaspoon coarse sea salt
1/4 cup grated Pecorino Romano cheese
2 tablespoons chopped fresh parsley
1 cup warm water (105 to 115 degrees F)
1 (1/4-ounce) envelope active dry yeast
1 teaspoon honey
2 tablespoons extra-virgin olive oil
3 cups unbleached all-purpose flour
1 teaspoon salt
Yellow cornmeal, for sprinkling the baking sheet

  • Preheat the oven to 400*F. Grease a baking sheet. In a bowl, mix the salami, garlic and jalapeno.
  • Unroll the pizza dough; cut crosswise into 12 pieces. Working with 1 piece at a time, roll the dough between your hands to form a 7-inch rope. Tie each piece into a knot and place on the prepared baking sheet. Brush the knots with the egg and sprinkle with the salami mixture and coarse salt. Bake until golden, about 18 minutes. Serve warm with mustard.

Continue mixing for another 8 minutes on low-medium speed until dough is soft and pulls away from the sides of the bowl.
  • Place dough in a large bowl brushed with oil, and toss to coat (the fat will keep the dough from drying out). Cover with plastic wrap and let sit in a warm place or on the counter for 1-2 hours, or until doubled in size. Keep in mind that rising will be slower in cold weather.
  • When the dough has risen, gently punch it to remove air. Divide the dough into 15 equal portions (each weighing about 45 grams) and shape each one into a strip about 20cm long. Gently stretch each strip and tie into a simple knot. Arrange knots on a baking sheet lined with parchment paper, keeping as much space between them as possible.   • Divide dough into 4 pieces, cover with plastic wrap, and let rise 1–1½ hours. Line 2 rimmed baking sheets with parchment paper.
  • Working with 1 piece at a time and keeping remaining pieces covered, roll dough on a lightly floured surface to a 6x4" rectangle. Cut dough into six 4x1" strips. Sprinkle dough all over with garlic powder, then flour. Roll 1 length of dough on work surface with your hands to round out edges (it will look like a worm). Tie into a single knot; the ends should just pass through the center without more than a 1" overhang (this allows the dough to rise in a nice compact shape, and keeping the ends short prevents it from looking like a bow). Transfer to prepared sheet. Repeat with remaining dough. Brush knots with oil, lightly cover with plastic, and let rise in a warm spot until puffed, 1–1½ hours.
  • Meanwhile, melt butter in a small saucepan over medium heat. Add garlic and cook, stirring, until just softened, about 2 minutes. Remove from heat and stir in parsley and remaining 2 Tbsp. oil; generously season with salt. Transfer butter mixture to a large bowl, add warm knots, and gently toss until coated.
