This is an incredibly simple recipe that tastes delicious. Accompany with rice for a quick and healthy main course. Easily adjustable for however many people you have)

Salmon With Mango Sauce image

Steps:

  • The skin will stick to the pan, so if it comes off easily, trim the skin off the salmon filets before cooking.
  • Otherwise, just wait for it to come off during the cooking process.
  • Heat enough oil to coat the pan, and then add the salmon fillets.
  • Pour approximately 1/3 the mango juice over the filets, then after a few minutes (3-5 depending on how thick the fillet is), flip over and add another 1/3 of the mango juice to the pan.
  • Cook the fillet until no longer pink, then remove from the pan.
  • Sprinkle with chives and serve with rice.

12 -16 ounces salmon fillets (6-8 oz per person, thin filets are better because they will cook more evenly)
2/3-1 cup mango juice (1/3 - 1/2 cup per person, either puree your own from fresh mangoes or Goya mango juice will do just)
scallion, chopped (for garnish, approximately a small handful per fillet)
olive oil (small amount for cooking)

Steps:

  • Preheat the oven broiler. Line a broiler pan with foil.
  • Broil salmon steaks on the prepared pan 12 minutes, or until easily flaked with a fork.
  • Heat olive oil in a medium saucepan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and cilantro. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos. Serve over the salmon steaks.

SALMON WITH BLOOD ORANGE, WINE AND MANGO SAUCE image

Steps:

  • Marinate the salmon in 2 tablespoons soy sauce, ¼ cup blood orange juice, 1 teaspoon orange peel, and a tablespoon olive oil for 30 minutes. Heat the rest of the olive oil in a medium sauté pan and add the onion rings. Cook over medium heat until the onions are cooked through - translucent and beginning to brown - about 10-15 minutes. Tilt pan and drain oil from onions, remove onions from the pan, reserving as much olive oil as possible. Remove the salmon from the marinade and add to the pan (you can also grill the salmon, just place it on the grill now and skip to the next step). Add the leftover marinade to the remaining blood orange juice. Cook salmon until done through, about 5 minutes per side. Remove from the pan and place on serving plate. Add the shallots and cook for 2 minutes. Add the red wine and boil until reduced by half. Add the orange juice, rosemary, Thai curry paste and brown sugar and stir quickly to mix. Add the red pepper, mango and cooked onions. Cook for about 3 minutes, until the sauce thickens and the mango and red pepper have just softened. Serve the sauce over the fish.

2 pounds fresh salmon fillets, skin and bones removed
2 tablespoons soy sauce
1 teaspoon blood orange zest
3 tablespoons olive oil
1 onion, sliced into thick rings
½ cup shallots
1 cup pinot noir
1 cup blood orange juice
1 teaspoon chopped fresh rosemary
½ teaspoon Thai red curry paste, or substitute a dash or two of Tabasco
1 teaspoon brown sugar

Sticky mango-roasted salmon image

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Put a chopping board on your work surface. Snap or carefully chop the stalks off the ends of the green beans. Cut any thick stems of broccoli in half lengthways. Cut the root ends and about 2cm off the green tops of the spring onions, then cut each onion into 3 batons.
  • Fill a large saucepan halfway with water, put it on the hob and turn the heat on to medium-high until the water boils. Carefully tip the prepared vegetables into the pan of boiling water and simmer for 1 min. Put a colander in the sink and carefully tip the veggies and water into it.
  • Find a large baking tray (ours was 30cm x 40cm). Tip the cooked veggies into the tray and drizzle with 2 tsp olive oil. Season with a pinch of salt and toss through the oil until well coated.
  • Push the veggies to the edge of the tray, making space in the middle, then lay the salmon, with the skin side down, in that space. Drizzle the remaining 1 tsp oil over the salmon and season with a pinch of salt.
  • In a bowl, measure 3 tbsp mango chutney, 2 tsp soy sauce and 1 tsp ginger purée, and mix the ingredients together to make a sauce. Pour half the sauce over the veg and salmon.
  • Use oven gloves to carefully put the tray on the middle shelf of the oven. Cook for 15 mins.
  • Carefully remove the tray from the oven using the oven gloves and pour the rest of the sauce over the salmon. Return to the oven for another 5 mins. Pick the coriander leaves and scatter these over the salmon and veg. Serve with cooked noodles or rice.

  • Remove salmon filet from the refrigerator 30 minutes before cooking and let sit in room temperature. Rub with olive oil and sprinkle with salt and pepper. Place blood orange slices all over the salmon. Roast in a 275-degree oven until it reaches a 120-degree internal temperature for medium rare, about 25 minutes. The center of the salmon may still look a bit translucent because of the low cooking temperature, but as along as it reaches that 120 degrees and it flakes easily, it's done cooking.
  • As the salmon roasts, make the blood orange glaze by mixing together in a small bowl freshly squeezed blood orange juice, garlic clove, 2 tablespoons honey, soy sauce, ginger, rice vinegar and a pinch of salt. Cook over medium heat until the mixture reduces to about 1/2 cup. Turn off heat and pour into a serving bowl. Stir in the remaining tablespoon of honey and set aside.
  • While the blood orange glaze reduces, toast sesame seeds in a skillet over medium heat until fragrant, about two to three minutes. Set aside.
  • When the salmon finishes roasting, remove from oven and sprinkle toasted sesame seeds and chopped cilantro on top. Allow everyone to spoon of their own portions from the salmon filet family style and pass around the glaze for every person to drizzle. Enjoy!
