GRILLED SALMON WITH MUSTARD ORANGE MARINADE
Dijon, orange juice and scallions, most of which are in your fridge. Easy, low in carbs and so delish. I found this on the eating well website. Hope you enjoy. Original recipe called for 2 T. dijon, we have chosen to cut back to 1 tablespoon and love it that way. Sometimes we broil in the oven and to keep the steaks moist, I add some of the leftover marinade about half way through broiling.

ORANGE ROASTED SALMON
I like to make this for company since you can get it ready ahead of time up until the final baking step. It looks both pretty and impressive, and the orange flavor is more subtle than you'd expect. This is a healthy and elegant meal (not to mention delicious) when served with a leafy salad, brown rice, and asparagus.

- Heat oven to 250 degrees. In a small bowl whisk mustard, sugar and 1/2 cup water together. Set aside.

Thickest part should still be raw in center.
- Brush top of salmon with remaining olive oil and then with mustard mixture. Place in oven about 20 minutes, until medium-rare in center. (An instant-read thermometer inserted in thickest part should register 100 to 110 degrees.) Remove from oven, and serve.

The foods in this easy recipe are powerhouses of nutrition. Why these foods are good for you: high omega-3 fat in salmon; antioxidants in orange rind, scallions and garlic; anticoagulant activity in ginger; and eating fatty fish could prevent an astounding 80% of sudden deaths from heart attacks, Harvard investigators say.
