BALSAMIC GLAZED VEGETABLES

Steps:
- Place veggies in a pan with water and vinegar. Bring to a boil and cover. Reduce heat to medium and cook 10 minutes. Remove lid and raise heat back up. Allow the water to boil away and the vinegar to reduce and glaze the veggies, about 5 to 7 minutes. When the vegetables are glazed, to a sweet, rich brown color add butter to the pan. Turn veggies to coat lightly with butter. Season with salt, pepper and serve. Garnish with parsley.
- For an optional glaze for the vegetables, substitute 1/4 melted butter and 1/4 cup honey for 1/2 cup balsamic vinegar. Follow method as listed.
SAUTEED GROUSE WITH PEACH-BALSAMIC SAUCE
I first tasted this in a restaurant owned by a friend who specializes in game bird dishes and loved it. He graciously gave me this simple but elegant recipe that I've been making for 10 years. This sauce has a mild sweet taste, a beautiful color and tastes delicious with delicate game meats such as grouse, pheasant or quail. Serve with wild rice pilaf and it's perfect for company.

Steps:
- Melt the butter with the garlic in a large skillet over low heat. Allow to bubble slowly for about 10 minutes to infuse the garlic into the butter, then remove garlic and reserve.
- Increase the heat to medium-high. When hot, brown the grouse until golden brown on both sides, about 3 minutes per side; then set aside.
- Pour the sherry into the skillet and allow to simmer for 20 seconds. Stir in the chicken stock, tarragon, and peach jam; bring back to a simmer, then reduce heat to medium-low, cover, and simmer for 5 minutes. Add the balsamic vinegar, and cook, covered for 2 minutes. Return the grouse to the pan, and simmer until fully cooked, 3 to 5 minutes.

- Mince shallots (3).
- Place butter in pan over medium heat and saute shallots until clear.
- Add sugar and balsamic vinegar.
- Bring to boil and stir constantly until sauce thickens slightly.
- Immediately ladle over freshly grilled steaks.

Mushrooms, balsamic vinegar. Think these make a great combination. Found the recipe in a "balsamic vinegar" cookbook.

BALSAMIC TOMATO SAUCE
This is a very easy pasta sauce, especially nice to make on busy nights. The basic recipe was adapted from the "Bon Appetit" November 2002 issue. The balsamic vinegar raises the sauce to a level above ordinary. It's a good sauce to play around with to make it your own.
