SHRIMP BURGERS WITH OLD BAY MAYO

Shrimp Burgers with Old Bay Mayo image

Steps:

  • For the shrimp burgers: Coarsely chop half of the shrimp. Put the remaining shrimp in a food processor and pulse until smooth. Combine both shrimp in a large bowl with the breadcrumbs, lemon juice, salt, garlic powder, pepper, scallions and egg and mix. Refrigerate for 10 minutes, and then form into 4 patties. Refrigerate 10 more minutes.
  • Heat the oil in a large cast-iron skillet over medium-high heat. Cook the burgers, about 3 minutes per side.
  • For the Old Bay mayo: Combine the mayonnaise and Old Bay to taste in a small bowl.
  • To serve, spread the buns with the mayo and place the burgers on the buns. Top the burgers with the avocado slices, lettuce leaves and tomato slices.

1 pound peeled and deveined medium shrimp
1/3 cup panko breadcrumbs
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
2 scallions, white and green parts, thinly sliced
1 large egg, lightly beaten
1/4 cup canola oil
1/2 cup mayonnaise
1 teaspoon to 1 tablespoon Old Bay seasoning
4 brioche buns, halved and lightly toasted
Avocado slices, for topping
Lettuce leaves, for topping
Tomato slices, for topping

What makes a burger Seattle-style? Flannel bun? Uh, no. Micro-brew on the side? Well, okay, probably. Espresso in the aioli? Yes! Don't knock it, it totally works! Just be careful the sauce doesn't get into your hipster beard. For best results, use Beecher's® cheese, Walla Walla onions, Chateau Ste. Michelle® red wine, and Starbucks® espresso. Steps:

  • Heat oil in a large skillet over medium-high heat. Saute onion and mushrooms in hot oil until onion begins to soften, about 5 minutes. Season vegetable mixture with salt and pepper; continue to saute until onions and mushrooms brown, about 5 minutes more.
  • Pour the red wine into the pan and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook and stir until wine evaporates, about 2 minutes; remove from heat.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook burgers until they are firm, hot in the center, and just turning from pink to grey, 8 to 10 minutes per side for medium well. An instant-read thermometer inserted into the center should read 150 degrees F (65 degrees C).
  • Whisk mayonnaise, Sriracha sauce, and espresso together in a bowl until aioli is smooth.
  • Spread aioli on each hamburger bun. Place a beef patty on the bottom bun, top with a slice of Monterey Jack cheese, 1/4 the onion-mushroom mixture, 1/4 cup arugula, and cover burger with the top bun. Repeat with remaining burgers.

Steps:

  • Roughly chop 3 or 4 shrimp and place in a bowl. Pulse remaining shrimp in a food processor and transfer to the bowl with the chopped shrimp.
  • Combine egg, bread crumbs, lemon juice, lemon zest, seafood seasoning, and black pepper in a bowl. Add shrimp and butter. Form mixture into 3 patties and refrigerate at least 30 minutes.

  • Combine all the ingredients. Shape into burger size patties. Grill for 10 to 15 minutes or until desired doneness. If cooking indoors, fry in light olive oil. Serve on your favorite bun with tartar sauce or shrimp sauce or alone with a salad.

Grilled Seafood Burgers With Old Bay Mayonnaise image

Steps:

  • Heat a grill to medium and oil the grates.
  • In a food processor, pulse the shrimp a few times just until finely chopped and a coarse paste forms. Transfer to a large bowl and add the cod, 1/4 cup of the scallions, the salt and pepper, and mix until well blended. (Hands work best.) Moisten your hands with water, then form the mixture into 4 (½-inch-thick) patties. Coat patties lightly with the oil.
  • Grill the burgers until lightly charred and just cooked through, 4 to 5 minutes per side. (Resist the temptation to prod or flip the burgers unnecessarily. They will release easily once they are cooked on each side.)
  • Meanwhile, in a small bowl, combine the mayonnaise, Old Bay and the remaining 2 tablespoons scallions; mix well.
  • Smear some of the Old Bay mayonnaise on the buns. Top each bottom bun with a burger and squeeze lemon on top. Top with some of the lettuce and pickles, close the burgers and enjoy.

Steps:

  • Grind shrimp into a paste in a food processor; transfer to a bowl, using a spatula.
  • Add the crabmeat to the bowl, breaking it up and flaking it as you add it.
  • Add in celery, scallions, red bell peppers, garlic, parsley, Old Bay, cayenne, chili powder, lemon zest, salt, and pepper; stir mixture to combine.
  • Preheat a large nonstick skillet over med-high heat; add in olive oil.
  • Using a large metal scoop or spoon, scoop 4 mounds of seafood mixture into the pan.
  • Gently pat down to form patties and fry 3-5 minutes on each side or until the shrimp turns whitish pink and the patties are evenly golden.
  • Split and toast the English muffins; butter the muffin bottoms.
  • Place burgers on muffin bottoms and squeeze lemon juice over them, then top with lettuce.
  • Slather the top of the muffins with cocktail sauce and set in place; serve.
