This easy-to-prep salad is perfect to take to luncheons or bridal showers-and it makes a refreshing meal on a hot day. It's just as tasty with chicken for non-seafood lovers. -Joyce Pappert, Mars, Pennsylvania

SEAFOOD RICE SALAD WITH LEMON PEPPER SEASONING BLEND
Found this in a Mrs Dash neswletter. It is cooling and refreshing. We made it with broiled shrimp & scallops & fluffy white rice. We enjoyed it very much! Calls for about an hour to two cooling time. The computer wouldn't let me use Mrs Dash Lemon Pepper Seasoning Blend so I did it this way.

LEMON-PEPPER RICE
My quick rice dish gets a zippy twist from lemon-pepper seasoning. It complements chicken and many other types of Mexican dishes quite nicely.-Patty Burk, Nanaimo, British Columbia

LEMON AND DILL SEASONING FOR FISH AND VEGETABLES
My simple flavor-enhancing seasoning doesn't overpower the natural flavors of fresh fish or vegetables. It can also be used for seasoned rice or rice pilaf (recipes below). To further compliment the flavors of fish, coat first lightly with olive oil, use seasoning -- add a small pinch of dried tarragon or crushed rosemary -- then cook as desired.

Steps:
- COMBINE all ingredients into a small container and shake well.
- STORE tightly sealed in a cool, dry place and shake well before using.
- SPRINKLE over fresh fish before baking, broiling, grilling or steaming, or over fresh vegetables before steaming.
- SUGGESTION TO FURTHER ENHANCE SEASONED FISH: Coat first lightly with olive oil before seasoning. Add a small pinch of dried tarragon or crushed rosemary, then cook as desired.
- TO PREPARE SEASONED RICE: Use 1 1/2 teaspoons Lemon and Dill Seasoning with each 1 cup water used for steaming rice. Or, you can use a portion of bouillon with water (2 cups water + 1 cup rice + 1 1/2 teaspoons Lemon and Dill Seasoning + 1 cube or teaspoon bouillon). To further compliment fish and seafood dishes add 1/4 teaspoon dried tarragon. Bring to a boil over stovetop for one minute. Reduce heat to low. Cover and simmer over low heat for 30 minutes. Uncover and fluff with a fork. Serves 4.
- TO PREPARE SEASONED RICE PILAF: Saute 1 tablespoon of 3/4-inch broken spaghetti or orzo pasta with 1 tablespoon slivered almonds in 1 tablespoon butter or olive oil until golden. Add 2 cups low-sodium broth, 1 1/2 teaspoons Lemon and Dill Seasoning, 1 cup rice, and 1 teaspoon capers if desired. Bring to a boil over stovetop for one minute. Reduce heat to low. Cover and simmer over low heat for 30 minutes. Uncover and fluff with a fork. For Greek-style pilaf add a pinch each dried crushed mint and oregano before boiling, then fluff rice with 2 tablespoons crumbled feta cheese after steaming. Serves 4.
THE FAMOUS SEAFOOD SEASONING RECIPE
This one really wasn't that hard to crack...The ingredients are printed on the container! The only difficult part was working out the correct ratios for each spice, or herb... But patient perseverance, and good ol' 'trial and error' saved the day. The original Old Bay® Seasoning was invented in the 1940's by an American-German immigrant named Gustav Brunn. Initially, it was intended only for use on crab meat (as there was plenty of it in the Chesapeake Bay area where Gustav lived!), but in the last decade or so, it's used in other food areas, such as poultry and salads.

ONE PAN SHRIMP AND RICE RECIPE - THE MEDITERRANEAN DISH

- Put 2 cups Basmati rice (or white long grain rice) in a large bowl and rinse with cold water (use your hand to swish the rice around). Repeat a few times and drain the rinsing water, then top the rice with cold water again, this time leave it to soak for 15 to 20 minutes. (You should be able to break a grain of rice easily once done soaking, if that's not the case leave it for a bit longer). Drain well.Tip: Use the time while the rice is soaking to prep the veggies
- In a large, deep pan with a lid (I used this 5-quart pan--affiliate link), heat 3 tablespoons extra virgin olive oil over medium heat. Add 1 cup each chopped red onion and red bell pepper. Add minced garlic, 1 cup peas, and a good amount of chopped fresh parsley (about 1/2 cup packed). Add a good pinch of kosher salt and cook for about 3 minutes to give the veggies a chance to soften a bit, then add the spices (1 tsp coriander 3/4 tsp to 1 tsp Aleppo pepper flakes (or a mild red pepper), ½ tsp cumin, ½ tsp paprika, ¼ tsp ground turmeric). Toss around and cook a couple more minutes so the spices release their flavor.
- Add the drained rice. Toss to combine and season with a big pinch of kosher salt. Add the water and bring to a boil until the liquid is reduced by about 1/2. Watch the liquid amount, it should not dry out but it should be just covering the top of the rice. At this point, turn the heat to low, cover the pan well with the lid and leave it alone for 15 to 20 minutes or until the rice is cooked.
- When the rice has fully absorbed the water, taste to be sure it's fully cooked (it should not be hard nor chewy). Add the shrimp, nestling it into the rice.
