I saw this on Sara's Secrets and couldn't wait to try it! The sauce brings out the sweetness in the fish. Enjoy!

- Stir together balsamic vinegar, water, lemon juice, and brown sugar in a small bowl.
- Pat salmon dry and season with salt and pepper.
- Heat oil in a 12-inch nonstick skillet over medium high heat, not smoking. Increase heat to high, add salmon skin side up, and sear until well browned, about 4 minutes.
- Turn fish over and sear until just cooked through, 3 to 4 minutes more.
- Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam).
- Simmer, stirring, until thickened and reduced to about 1/3 cup, about 2 minutes.
- Spoon glaze over salmon.
- Serve and enjoy!

My husband found this recipe somewhere online a while ago and it has become my absolute favorite salmon dish. Tip: salmon should be no thicker than 1"and sliced into 2" wide pieces. Pepper measurements are approximate.

Steps:
- Dust salmon with freshly ground pepper, flesh side up.
- Heat oil in the pan on high heat until oil gets a little smoky.
- Starting with pepper-side down, sear 3 minutes each side.
- Remove salmon from pan and reduce heat to medium.
- Immediately place balsamic vinegar in pan, where it will reduce quickly.
- Add Dijon and mix until well blended.
- Starting with pepper-side down, place salmon into glaze, coating both sides completely and turn fire off.

PAN SEARED SALMON WITH CITRUS VINEGAR GLAZE AND GREEN BEANS

- Preheat a cast iron pan or heavy bottomed skillet over medium high heat. Brush the salmon fillets with oil. Season with salt and pepper. Cook salmon until just cooked through, about 3 minutes on each side.
- While salmon cooks, bring wine, vinegar, citrus juices and brown sugar to a boil over high heat. Reduce glaze 3 or 4 minutes, until thickened. Remove from heat. Stir in 1/2 teaspoon coarse black pepper.
- In a second skillet, bring 1/2-inch water to a boil with green beans and pieces of orange and/or lemon rind. Cover the green beans and cook 3 or 4 minutes. Drain the beans and toss with a drizzle of oil (optional) and season with salt and pepper.
- Drizzle glaze over salmon fillets and serve with citrus green beans.

- For the glaze: In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat to a simmer and cook until thick, about 12 minutes. Set aside to cool for 5 minutes.
- For the salmon: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Line a small baking sheet with parchment paper. Arrange the salmon on the baking sheet. - Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil, and spray with non-stick cooking spray.
- Coat a small saucepan with non-stick cooking spray. Over medium heat, cook and stir garlic until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, and salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened.

- Sprinkle salt and pepper on salmon.
- Melt 1 T butter in medium skillet over medium-high heat.
- (If you use a large skillet, you'll need to use more butter. For a better finished result, medium is preferred.) Add salmon; saute' until just opaque in the center, about four minutes per side if thick.
- Transfer salmon to a plate.
- Melt 1/2 T butter in same skillet.
- Add 1/2 the shallots and half the tarragon; saute' 30 seconds.
- Increase the heat to high; add half the spinach and toss 30 seconds.
- Add remaining spinach and toss until wilted.
- Divide the spinach between two plates.
- Melt remaining 1/2 T butter in same skillet over medium-high heat.

- Spray a large cast-iron skillet or stainless steel skillet with nonstick cooking spray and heat it over medium-high heat.
- When the pan is hot, add half of the butter, and let it melt.
- The pan should be hot enough that the butter bubbles but doesn't brown.
- Add in the salmon, skin side down and top it with half the lime juice and half of the salt.
- Sear the salmon (cook it without moving it) for about 5 minutes until it starts to cook through.
- Add the remaining half of the butter to the pan and flip the salmon.
- Decrease the heat slightly; top the salmon with the rest of the lime juice and a little more salt.

- Toss fist four ingredients in a large bowl.
- Whisk next four ingredients in a medium bowl.
- Heat remaining 1 tablespoon canola oil in heavy large skillet over medium-high heat.
- Sprinkle salmon with salt and pepper and then add to pan.
- Cook until brown on one side which takes about 4 minutes.
- Turn and cook until opaque in the center, about 2 minutes longer.
- Transfer salmon to plate; tent with foil to keep warm.
- Add ginger and garlic to same skillet and sauté for one minute over medium high heat.
