Steps:
- Cook turkey as specified on the package. Always cook to well done, 165 degrees F as measured by a meat thermometer.
- Add garlic, ginger, soy sauce, brown sugar, green onions and red bell pepper. Cook 7 minutes or until garlic is soft.
- Stir in mint leaves. Immediately transfer meat to a shallow dish and chill 1 hour.
- Remove core from head of lettuce; separate, wash and dry leaves.
- Spoon chilled turkey mixture in lettuce cups.

- In 10-inch nonstick skillet, cook turkey over medium-high heat, stirring frequently, until thoroughly cooked; drain and return to skillet. Stir in green onions, cilantro, mint, lime juice, fish sauce, peanut butter, chile paste, sugar and red pepper flakes. Cook 3 to 4 minutes longer or until hot.
- To serve, spoon 2 heaping tablespoons turkey mixture, 2 tablespoons carrots and 1 teaspoon peanuts onto each lettuce leaf; wrap around filling. Serve warm.

- In a large wok or frying pan, heat the oil and fry the turkey mince until browned and cooked through. Transfer to a bowl and set aside.
- Tip the carrots, water chestnuts and beans into the pan and stir-fry for 2 mins. Add the ginger and garlic, drizzle over the soy and stir-fry for 1-2 mins more. Add the mince and stir-fry until hot. Season to taste.
- To serve, pile the turkey and veg into lettuce leaf 'cups' and drizzle over the plum or chilli sauce.

- Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.
