REFRIED BEAN DIP

I made this the first time for public use at a pot luck at Alcatraz. It went over so well, I've been making it ever since. I figure a piece of paper is easier to give to someone than having to make this. I hope you enjoy it.

Refried Bean Dip image

Steps:

  • Mix together refried beans and 1/4 of salsa.
  • Place mixture in bottom of 8 x 8 glass dish.
  • Pour remaining salsa on top of bean mixture.
  • sprinkle half of taco seasoning or to taste over salsa.
  • Sprinkle chopped onions over salsa mixture.
  • Spread sour cream over salsa mixture.
  • Sprinkle cheese over top of sour cream.
  • Cover and chill over night.
  • Serve with Corn chips, crackers, dipping utensiles ect--.

1 (1 1/4 ounce) package taco seasoning
1 bunch spring onion, chopped, at least 6 whites only
16 ounces sour cream
8 ounces sharp cheddar cheese, shredded

This Cheesy Refried Bean Dip is so easy to throw together and makes a delicious appetizer or party food. With onion, garlic, refried beans, cream cheese and shredded cheese, you can't go wrong!

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in a saucepan over medium heat and saute onion and garlic for 2-3 minutes, or until onions start to soften.
  • Add refried beans to the saucepan and stir until heated through.
  • Remove from heat and fold in cream cheese.
  • Spread bean mixture into a pie pan or small baking dish sprayed with nonstick cooking spray.
  • Top with cheese.
  • Bake for 15-20 minutes, or until cheese is melted.
  • Garnish with green onion.
  • Serve with tortilla chips.

  • Combine refried beans, pinto beans, diced tomatoes and green chiles, and salt in a microwave-safe bowl. Microwave on high for 4 1/2 to 5 minutes.
  • Remove from the microwave and stir until pinto beans are slightly mashed. Sprinkle Cheddar cheese on top and serve immediately.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sour cream, cream cheese, and taco seasoning mix together in a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir beef with the cumin, oregano, garlic powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Spread refried beans into the bottom of a 9x13-inch baking dish. Layer ground beef mixture over refried beans, lightly pressing beef into beans; top with sour cream mixture.
  • Stir salsa and salsa con queso together in a bowl; pour over sour cream mixture layer. Spread Mexican cheese blend, tomato, olives, and green onions, respectively, over sour cream mixture layer.
  • Bake in the preheated oven until heated through and bubbling, about 30 minutes.
