SHINY TOP COBBLER

the glaze on top makes this special. even great made into a pineapple cobbler. you can make this with whatever fruit is in season.

Steps:

  • 1. spray a 13X9 pan and spread fruit over the bottom
  • 2. in a large mixing bowl combine all the batter ingredients. batter will be thick.**flour, sugar, milk, salt, b powder, margarmine.
  • 3. spoon batter over fruit. spread with a spatula to try to cover.
  • 4. combine the corn starch and sugar
  • 5. sprinkle over top of batter
  • 6. pour the boiling water over the top
  • 7. bake at 350 degrees for one hour until golden brown.

5 c fruit of your choice (drained if using canned)
2 c flour
1 1/2 c sugar
1 c milk
1/2 c soft butter or margarine
2 tsp baking powder
1/2 tsp salt
GLAZE TOPPING
2 Tbsp cornstarch
1 1/2 c sugar
1 1/2 c boiling water

Steps:

  • 1. Spread Fruit in 8 x8 , baking pan, sprinkle with lemon juice Set aside Stir together flour, 3/4 cup sugar, baking powder and salt Mix in small pieces of butter then stir in milk. Makes a thick batter. Spread mixture over fruit and to edges of pan. Mix the remaining sugar and cornstarch. Sprinkle over batter. pour boiling water over all
  • 2. Bake in a preheated 350 oven for 1 hour or until top is nice and brown.
  • 3. Serve with whipped cream or ice cream

3 c berries, or sour cherries,peaches
3/4 Tbsp lemon juice, fresh
1 c flour
1 1/2 c sugar, divided
1/2 c milk
3 Tbsp butter, softened, cut into small pieces
1 tsp baking powder
1/2 tsp salt
1 Tbsp cornstarch
3/4 c boiling water

FRUIT COBBLER

My son took first place in a baking contest with this one. Serve warm or cold plain, with ice cream or whipped cream. When I use apples, a sprinkle of cinnamon or apple pie spice makes a nice touch. In place of peaches, try using apples or plums.

Steps:

  • Melt butter or margarine in a 9 x 13 inch pan. Set aside to cool.
  • Stir together flour, sugar, salt, and baking powder. Mix in milk and vanilla. Pour batter over melted butter. DO NOT MIX OR STIR. Spoon fruit with juice over the batter. DO NOT MIX OR STIR.
  • Bake at 350 degrees F (175 degrees C) for 55 minutes.

  • In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
  • Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
  • Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
