DRY RUB FOR SPICY BBQ RIBS
After trying a few different recipes for a dry rub, we came up with our own version. We like more spicy than sweet.

Steps:
- Wash rack of ribs, remove membrane on back, and pat dry with paper towel. You can either leave as a rack and thread onto a spit or cut into 2-3 rib sections.
- Mix all remaining ingredients until well blended. Rub the mix over both sides of ribs until it's all used up. I sometimes double the recipe to get a really good coating. You can either put in fridge overnight or grill at 350 F right away on bbq over indirect heat. The bbq acts more like an oven this way. The sugar will burn if you grill over direct flame.
- They will take an hour to cook through.

SIMPLE DRY SPICE BARBECUE RUB
This is just a simple rub but it produces TONS of flavor! give it a try on beef, pork, chicken or fish, at your next BBQ, you will really like it! If you don't use all of it, store it tightly covered in the refrigerator, it will keep forever. For even more intense flavor marinate the meat overnight in the fridge in the rub!

BBQ SPICE RUB

- Spread cumin seeds in a small dry skillet over medium heat and toast, shaking pan often to prevent burning until fragrant, 2-3 minutes.
- Remove from heat, let cool to room temperature, and grind to a fine powder in a spice grinder, coffee grinder, blender, or mortar & pestle.
- Transfer to small bowl and add the rest of the ingredients.
- Stir together well. This rub will stay potent, covered and kept in a cool dry place for up to 6 weeks.

- Heat peppercorns, coriander seeds, cloves, and mustard seed in a small dry skillet over medium heat, swirling pan gently, until they become fragrant; remove from heat and cool slightly.
- Grind peppercorns, coriander seeds, cloves, and mustard seeds to a powder in a mortar or spice mill; pour mixture into a small bowl, and add other ingredients, mixing well.
- Store in an airtight container.
- To use: rub mixture on meats or ribs at least 15 minutes before cooking, and leave at room temperature.
- Can coat and leave refrigerated up to 24 hours in advance.

SPICEJUNKIE'S BBQ DRY RUB NO.14
I made this rub for my daughters 14th birthday, which is why I called it BBQ dry rub No.14. It gives pork a nice sweet flavor that goes well with all the other spices. This rub has a mild flavor and will not burn sensitive pallets. The light brown sugar gives a gentle sweetness to offset the other spices and is great on ribs or pork shoulder. For ribs sprinkle salt and pepper and refrigerate overnight. Larger cuts of meat can use more. For heat lovers, add 1 tablespoon cayenne pepper (or any amount you like).

BARBECUE DRY RUB
This is a really good spicy barbecue dry rub. I use it mostly on wings that I marinate 24+/- hours in the fridge, but have also used it on short ribs, too. It is really good, makes a lot. Use 2 tbs or so on 15 or so wings.

QUICK AND EASY BARBECUE RUB
This rub is my personal recipe, settled on after lots of experimenting. It's great on ribs, brisket, and pork butt. Quick and easy from ingredients everyone usually has. This recipe makes enough for 2 to 3 full racks of baby back ribs, depending on how liberally you coat them. For those that are new to barbecuing/smoking, 'rub' is a misnomer, as you're really just coating the meat and not actually rubbing it in. Generally, I'll rinse and pat dry the meat I'm prepping then apply a thin coat of yellow mustard so that the rub sticks.

- Gather and measure spices: Collect all of the spice ingredients needed to prepare rub. Measure each ingredient into a medium-sized bowl. (Or, if you are a little clumsy, measure each spice into a small prep bowl before adding it to a larger bowl – this helps if you measure something incorrectly!!
- Mix: Combine all the ingredients together in a small mixing bowl. Stir well to fully combine. Use a fork, spoon or your fingers to make sure all of the brown sugar is completely broken up and no large clumps remain.
- Optional - For a fine textured rub: Combine all the ingredients together in a food processor and process until combined. (SEE NOTE)
- Store: Transfer mixture to an airtight container or resealable bag. Store in a cool, dark place for up to 3 months.
