  • In a bowl, combine all ingredients. Place in refrigerator for up to 12 hours for flavor infusion.

6 Roma tomatoes, chopped
4 garlic cloves, minced
2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos
1 red bell pepper, fine dice
1/2 red onion, fine chopped
2 dry ancho chiles, seeded, cut into short strips and snipped into pieces
1 tablespoon olive oil
1 lime, juiced
Chili powder, salt, and pepper, to taste
Fresh scallions, cilantro or parsley, to taste

Restaurant-Style Salsa image

Steps:

  • Combine the diced tomatoes, whole tomatoes, cilantro, onions, garlic, jalapeno, cumin, salt, sugar and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)
  • Pulse until you get the salsa to the consistency you'd like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.
  • Refrigerate the salsa for at least an hour before serving.

Two 10-ounce cans diced tomatoes and green chiles, such as Rotel
One 28-ounce can whole tomatoes with juice
1/2 cup fresh cilantro leaves (or more to taste!)
1/4 cup chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin, with seeds and membrane
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 whole lime, juiced

FRESH CALIFORNIA SALSA

I just throw this together, but it is very popular and requested at potlucks. Serve with tortilla chips.

Fresh California Salsa image

Steps:

  • In a small mixing bowl, combine tomatoes, onion, garlic, cilantro and lime juice. Add jalapenos 2 teaspoons at a time, tasting after each addition to see how hot the salsa has become. Jalapeno peppers vary in heat, so it is important to taste the salsa to ensure you do not make it too hot to handle. Salt to taste. Enjoy!

Chipotle Garlic Salsa image

Steps:

  • Place tomatoes, with their juice, in a medium non-reactive saucepan. Finely chop or puree the chiles with their liquid and add to the tomatoes. (If a milder sauce is desired, only use half the chiles.) Bring to a boil over medium heat. Reduce heat and simmer, stirring occasionally, about 30 to 45 minutes until reduced by about one--quarter.
  • Meanwhile, thinly slice or mince the garlic cloves. Add with the remaining ingredients during the last 10 to 15 minutes of cooking time. When the salsa has reached the desired consistency, remove from the heat and let cool slightly. Adjust seasoning. and let cool to room temperature. Store in the refrigerator, tightly covered, up to one week or freeze up to 3 months.
  • NOTE: For a smoother consistency, puree all or part of the tomato-chile mixture before adding the other ingredients.

  • Preheat the oven or a toaster oven to 400F degrees. Place the whole head of garlic (the top 1/4 inch cut off) in a piece of tinfoil that is large enough to wrap and cover the garlic. Drizzle the olive oil over the garlic and wrap the foil around the garlic to secure a nice pouch. Roast the garlic in the preheated oven for 30-40 minutes until soft and fragrant.
  • Put the diced tomatoes, Rotel, onion, carrot, jalapeño and all the roasted garlic into the base of a food processor. Pulse 8-10 times until the the salsa is evenly blended. Add the honey, salt, cumin, cilantro and lime juice. Pulse 5-6 times just until the cilantro is mixed through and the salsa is desired consistency. Taste for seasoning and adjust to taste. Serve with chips or over tacos.
