SHRIMP WITH COCKTAIL SAUCE
Steps:
- Cut the lemon in half and add it to a large pot of boiling salted water. Add the shrimp and cook, uncovered, for only 3 minutes, until the shrimp are just cooked through. Remove with a slotted spoon to a bowl of cool water. When the shrimp are cool enough to handle, peel and devein them. Keep cold until ready to serve.
- For the cocktail sauce, combine the chili sauce, ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Serve with the shrimp.
STEAKHOUSE SHRIMP COCKTAIL WITH SISTER SAUCES

- Poach the shrimp: Add 6 cups of water to a medium-sized saucepan. Squeeze the lemon juice into the saucepan and then add in the lemon halves as well. Add the parsley sprigs, garlic, 1 teaspoon salt and peppercorns and bring to a simmer. Once the water is simmering, add the shrimp and cook until just opaque, 3 to 4 minutes. Remove the shrimp from the poaching liquid and chill completely.
- To serve: Cover a platter with crushed ice and arrange the shrimp on top. Serve with the Spicy Cocktail and Lemon-Basil cocktail sauces.
- Add the ketchup, chipotle, horseradish and lemon juice to a small bowl and whisk to combine.
- Add the sour cream, mayonnaise, basil, lemon zest, 1/4 teaspoon salt and 1/4 teaspoon pepper to a small bowl and whisk to combine.
QUICK COCKTAIL SAUCE

- In small bowl combine ketchup, horseradish, a dash of Worcestershire, a squirt of lemon, and a dash of Tabasco sauce. Chill and serve.
FRIED SHRIMP IN ATOMICOCKTAIL SAUCE

- In a large bowl whisk together the eggs, buttermilk, flour, pepper and 1 teaspoon salt. Add the shrimp and let it chill out in the fridge for at most 30 minutes.
- Preheat the oven to 200 degrees F. Heat the oil to 350 degrees F in a deep-fryer or Dutch oven. Fit a sheet pan with a rack.
- In a wide shallow bowl or baking dish, whisk together the breadcrumbs, cornmeal, garlic, paprika, cayenne and remaining 1/2 teaspoon salt.
- Working in batches, use tongs to transfer the shrimp from the buttermilk mixture to the breading mixture. Make sure the shrimp is completely coated. Holding the shrimp by the tails, gently drop into the oil, one at a time. Fry in batches until golden brown, about 2 minutes per batch, allowing the oil to return to 350 degrees F between batches. Transfer the shrimp to the prepared sheet pan. Keep the shrimp warm in the oven.
- Serve with the AtomiCocktail Sauce and lemon wedges.
- Mix the ketchup, horseradish, pepper, lemon juice, Worcestershire sauce and fish sauce in a bowl. Chill for at least 1 hour before serving.
MEXICAN SHRIMP COCKTAIL
I first tried something similar to this in San Antonio and could never find a recipe that really recaptured what I had there. I experimented and finally came up with this. Anyone who has tried it has begged for the recipe. Try it with tortilla chips!

I played with different ways of cooking shrimp for a while and different seasonings to spice it up, but this really became the standard; good shrimp, seasoned just to highlight their flavor, and refreshing cocktail sauce to compliment them perfectly. This is a big hit at all of our family gatherings as an appetizer, snack, or even part of the meal. No more over-paying for those tiny, rubbery shrimp cocktail circles at the grocery store, only to dip them in mediocre cocktail sauce. Try this for easy and yummy shrimp cocktail!

- Set oven to 400°F.
- Spray a large baking sheet with cooking spray, or sparingly brush with vegetable oil, and spread shrimp out in a single layer. Sprinkle on salt and pepper and toss to coat evenly. Make sure to spread shrimp back into a single layer so that they do not overlap during cooking.
- Cook on middle oven rack until shrimp turn pink (2-5 minutes) and then turn shrimp over and repeat. Be sure not to overcook the shrimp or they will end up very rubbery. You can also boil the shrimp for 4 minutes (on a constant rolling boil) but I think that baking them really allows their natural flavors to brighten.
- Remove shrimp from oven and enjoy warm, or allow to cool to room temperature before moving shrimp to the fridge for chilled shrimp cocktail.
- Make the sauce: blend all ingredients in a small bowl or ramican, adjusting ingredients to suite your taste. (At this point, I will sometimes add some chili sauce or Tobasco to give it a kick) If you accidentally add too much spice, just add more ketchup until it's just right.

- In a Dutch oven, combine the first 8 ingredients; bring to a boil. Add shrimp.
