THE BEST FUDGY BROWNIES

We've created the perfect brownie by employing a few tips and tricks. Using both semisweet chocolate and cocoa powder gives us the deep and complex chocolate flavor we crave. Cooking the butter until golden brown adds a toasted nuttiness, while the pop of cream provides luscious texture.

The Best Fudgy Brownies image

Steps:

  • Arrange a rack in the center of the oven and preheat to 350 degrees F. Spray a 13-by-9-inch baking pan, preferably metal, with nonstick baking spray. Line the pan with parchment paper leaving a 2-inch overhang on the longer sides. Lightly coat with nonstick spray.
  • Melt the butter in a large saucepan over medium heat, swirling occasionally, until the butter is a deep golden color, about 5 minutes; the butter will hiss and spit as the whey evaporates so be careful. As the foam subsides the butter will go from a canary yellow color to golden. When it does, take it off the heat. Add the chocolate and cream to the butter and let it sit, stirring occasionally, until the chocolate is melted.
  • Sift the flour and cocoa powder through a fine-mesh sieve into a medium bowl. Beat the granulated sugar, brown sugar, salt, vanilla, espresso powder and eggs in the bowl of a stand mixer fitted with the whisk attachment. Start on low speed and gradually increase to high speed until the eggs are pale, very thick and fluffy, about 8 minutes (start your timer when you get to high speed). Do not be tempted to skimp on the mix time; this step is key to getting the signature shiny, crackled brownie top. Reduce the speed to low and slowly pour the warm chocolate into the eggs; beat until completely incorporated. Gradually add the dry ingredients and beat until just combined; do not overmix. Use a rubber spatula to scrape the sides and bottom of the bowl and fold until the batter is completely combined.
  • Scrape the batter into the prepared pan. Bake until the brownies are glossy and just barely firm, and an instant-read thermometer inserted into the center registers 205 degrees F, 25 to 35 minutes. Don't let the thermometer touch the bottom of the pan or you will get a much higher reading. (The cook time will be at the higher end of the range if using a glass or ceramic baking dish.)
  • Let the brownies cool completely to allow the crumb to set before slicing, about 3 hours.
  • Use an offset spatula to loosen the brownies from the sides of the pan. Use the parchment overhang to lift the brownies out of the pan. Remove the parchment and cut into 24 squares.

MARGARET'S SKOR CHOCOLATE BROWNIES

A colleague brought these for a potluck. They are delicious. You can also add skor pieces to the batter in addition to sprinkling them on top. She also said if you are pressed for time you can use a brownie mix. Enjoy!

Steps:

  • In a small saucepan melt cocoa and butter, stirring as it melts.
  • Remove from heat.
  • In medium bowl beat eggs until frothy.
  • Add sugar, flour, nuts and salt (and extra skor pieces if using).
  • Pour cocoa mixture over and stir all together.
  • Scrape batter into greased 8x8 inch pan.
  • Bake at 350 degrees F for 30 min, until edges show signs of pulling away from the sides of the pan.
  • Topping:.
  • Combine chocolate chips and skor toffee pieces.
  • approximately 5-10 min before brownies are finished, remove from oven and sprinkle with mixture of chocolate chips and skor chip toffee pieces.
  • Return to oven for remainder of baking time.
  • If chocolate/toffe is not sufficiently melted when the brownies are done, comver with tinfoil while they are cooling.

Steps:

  • Butter and flour an (8-inch square) baking pan and preheat the oven to 350 degrees F.
  • In a small heavy saucepan melt the chocolate and butter over low heat, stirring until the mixture is smooth, and let the mixture cool completely. Into a bowl sift together the flour, baking powder, and salt. In a large bowl, using an electric mixer, beat the eggs. While still beating, add the sugar, a little at a time, and beat the mixture at high speed for 3 minutes, or until thick and pale.
  • Add in the chocolate mixture and the vanilla, and then add in the flour mixture, stirring until the mixture is blended well. Stir in the walnuts. Pour the batter into the baking pan, smoothing the top. Bake the brownies in the middle of the oven for 25 to 30 minutes, or until the brownie pulls away slightly from the sides of the pan, and a cake tester, inserted in the center, comes out with crumbs adhering to it. Let the brownies cool completely in the pan before cutting them into squares.

Steps:

  • 1. Preheat oven to 350°F (180°C). Line the bottom and sides of a 13 x 9-inch (3-L) baking pan with a large sheet of heavy duty foil with edges overhanging the sides of pan. 2. Combine butter and chocolate in a saucepan. Place over medium heat and stir until melted and smooth. Remove from heat; stir in sugar, then eggs and vanilla. Stir in flour and salt to make a smooth batter. 3. Spread evenly in pan. Bake on middle rack in oven for 18 minutes or until top is almost set. Sprinkle Skor toffee bits over top and return pan to oven. Bake for 8 to 10 minutes more or until a toothpick inserted in centre comes out with a few moist crumbs clinging to it. Steps:

  • 1. Melt sugar, milk, butter or margarine and marshmallows over medium heat stirring constantly. Bring to a boil for 2 minutes. Remove from heat.
  • 2. Add vanilla, milk chocolate chips and Skor bits. Stir until chocolate melts. Pour into a 9 x 9-inch greased pan. Let harden in fridge or freezer for at least 4 hours (I usually let it sit overnight). Serve.

Steps:

  • Heat oven to 350 degrees. Butter a 13-by-9-inch glass baking pan. If using walnuts, spread on a baking sheet and toast in oven until fragrant and lightly browned, 8 to 10 minutes. Let cool.
  • Melt butter in a small saucepan over low heat. Remove from heat, add chocolate, and cover pan until chocolate is melted, about 10 minutes. In a mixing bowl, whisk the eggs, salt, sugar and vanilla just until thick, creamy and beginning to lighten in color.
  • Whisk the butter and chocolate until smooth, then mix into the sugar-egg mixture just until well combined. Using a spatula, fold in the flour, using as few strokes as possible, until it disappears. Fold in the walnuts, if using. Spread the batter evenly in the baking pan.
  • Bake for 25 to 30 minutes, checking after 22 minutes to avoid over-baking. When the tip of a knife inserted in the center comes out with moist crumbs, but not liquid, remove brownies from the oven. Allow to cool to room temperature, then cover and leave in the pan for several hours or overnight before cutting into squares. Store in an airtight container.
