- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
THE BEST SLOPPY JOES
This is weeknight comfort food at its finest. We created a homemade sauce that is tangy and flavorful but also quick and easy. We used both ketchup and canned tomato sauce for lots of tomato-y zip and just a touch of brown sugar for a bit of sweetness and slight caramel finish. Green bell pepper is a key addition; it really enhances the other ingredients, elevating the flavor profile into the realm of a true sloppy joe.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. Spoon the meat onto the toasted buns.
CLASSIC SLOPPY JOES
Soft sandwich buns work best with this classic kid-friendly Sloppy Joe recipe-as do chips and pickles. The beef mixture can also be served over pasta.

- In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
- Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
- Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
- Season the mixture with more salt and pepper, as desired. Spoon onto buns, and serve immediately.
SLOPPY JOES
You don't want to miss this one. The recipe came with my electricity bill, probably some 39 years ago. I tried it and it was the best recipe for Sloppy Joes I have ever had. I've been making it ever since. Great taste and just the right amount of everything.

- Cook on low for 3-5 hours.

- (This may be made on top of the stove on a very low heat for several hours, making sure that it does not get dry, but the flavors mix the best in a crock pot).

From the May issue of Everyday with Rachael Ray. This is a Spanish version of an American classic. I love the kick of Recipe #82944 and reach for that recipe often, but this is something just a little different for an easy dinner.

- In a deep skillet, heat olive oil over medium heat.
- Add the garlic and onion and cook until softened, about 4 minutes.
- Add the mushrooms and cook until browned,about 5 minutes.
- Add the beef and cook, breaking it up with a wooden spoon, until browned.
- Season with salt and pepper.
- Stir in the sherry and cook, scraping up any browned bits from the bottom of the pan,until slightly reduced, about a minute.
- Stir in the tomato and Worcestershire sauces and simmer for 10 minutes.
- Preheat the broiler.
- Spread the butter on the rolls and toast.
- Sprinkle the parsley on the roll bottoms and pile on the beef mixture.
- Using a vegetable peeler, shave the cheese over the meat.
- Set the roll tops into place and enjoy.

SLOPPY JOES
This simple version of sloppy Joes, the classic sandwich served in school cafeterias and at kitchen counters across the country, comes together in about 20 minutes and can be made with ground beef, chicken or turkey. As the name suggests, they are messy, so serve with a fork and plenty of napkins.

- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

The secret to a great 'Sloppy Joe' is a thick, rich, almost dry consistency, which allows it to be eaten two-fisted, sans fork.

- Combine the ground beef and onion in a cold skillet, place the skillet onto a stove burner, and turn the heat to medium; cook and stir until the beef is crumbly and browned. Stir the garlic and bell pepper into the beef mixture; continue cooking and stirring until the vegetables are tender, 2 to 3 more minutes. Add 1 cup of water. Mix in ketchup, brown sugar, Dijon mustard, Worcestershire, salt, and pepper. Pour in 1 more cup of water. Bring to a simmer. Reduce heat to low and cook until the mixture becomes very thick, 30 to 45 minutes. Adjust salt and pepper as needed. Season with cayenne.

This is a recipe of my mother's that we always wanted for parties. It is shredded meat in sauce. Actually, we know it by the name Beef Barbecue, but I think barbecue means different things depending on where you're from.

- Simmer meat several hours until it falls apart when pierced with a fork; then remove meat from liquid and shred with a fork (liquid may be used as stock in other recipes).
- Combine onions, green pepper, butter, brown sugar, tomato paste and salt, and simmer 15 minutes,or until tender.
- Add mustard, Worcestershire sauce, Tabasco, pepper, red pepper and catsup, and simmer 5 more minutes.
- Combine sauce with meat.
- Serve hot on hamburger buns to make sloppy joes.
- Note: It is also possible to use ground beef.
- Brown in frying pan; remove as much fat as possible, and stir in sauce.
