SLOW-COOKER CAJUN TURKEY MEATBALLS AND GRITS

Slow-Cooker Cajun Turkey Meatballs and Grits image

Steps:

  • Place turkey and bread crumbs in large bowl. Add egg; 1/2 cup each celery, peppers and onions; 2 Tbsp. 57 Sauce; and 2 tsp. Cajun seasoning; mix just until blended.
  • Shape into 30 (1-inch) balls; place in slow cooker sprayed with cooking spray.
  • Combine tomatoes with remaining celery, peppers, onions and Cajun seasoning; pour over meatballs. .
  • Cook on LOW 6 to 8 hours (or on HIGH 3 to 4 hours). About 15 min. before meatballs are done, cook grits as directed on package, omitting salt.
  • Use slotted spoon to transfer meatballs from slow cooker to bowl; cover to keep warm. Stir remaining 57 Sauce into sauce remaining in slow cooker.
  • Add cheese to grits; cook and stir 2 to 3 min. or until melted. Serve topped with meatballs and sauce.

These slow cooker turkey meatballs in tomato sauce are a great alternative to traditional beef meatballs. Can be served over pasta or make meatball sandwiches with sauteed onions and peppers with melted Italian cheese over the top. Fantastic!

Slow Cooker Turkey Meatballs in Tomato Sauce image

Steps:

  • Saute onion and Italian dressing in a small saute pan over medium heat for 5 minutes. Remove from heat and let cool slightly, about 5 minutes.
  • Combine turkey, bread crumbs, garlic, sauteed onions, Italian seasoning, salt, and pepper in a bowl; mix well.
  • Combine diced tomatoes and marinara in a second bowl; set aside.
  • Form 1/2 of the turkey mixture into 1 1/2-inch meatballs and layer them in the bottom of a slow cooker. Pour 1/2 of the tomato mixture over the meatballs. Form the remaining turkey mixture into meatballs and layer with remaining tomato mixture.
  • Cover and cook until no longer pink in the centers, about 4 hours on High, or 8 hours on Low.

Steps:

  • Heat the slow cooker if necessary. Heat the oil in a non-stick frying pan and add the onion, carrots, celery and garlic and fry gently for a minute. Pour in the passata, add the parsley and stir, then transfer the lot to the slow cooker.
  • To make the meatballs, tip the mince into a large bowl. Add the oats, paprika, garlic and plenty of black pepper, and mix everything together with your hands. Divide the mixture into 20 lumps about the size of a walnut and roll each piece into a meatball. Spray or run a non-stick pan with a little oil and gently cook the meatballs until they start to brown. Add them to the tomato base and cook on Low for 5 hours. Serve over rice or pasta if you like, or with a green salad.

Steps:

  • Put the butter in a pan over a low heat. Stir in the flour and cook, stirring all the time to make a roux. Cook until the roux is hazelnut brown in colour - make sure that it doesn't burn. Tip in the vegetables, garlic and bay leaf, stir briefly, then pour in the tomatoes and 1½ cans of water. Crumble in the stock cube, add the hot sauce, then cover and cook for 15 mins, stirring occasionally, while you make the meatballs.
  • Work the spice and some seasoning into the turkey mince. Try not to over-handle or it will toughen. Shape into 20 meatballs.
  • Heat the oil in a large non-stick pan and quickly brown the meatballs in batches until they are nicely coloured on all sides.
  • Stir the sauce, then drop in the meatballs and cook on a low heat for 10 mins until the turkey is cooked through. Scatter over the spring onions and coriander, and serve with some rice or mash.

  • Beat the egg in a large mixing bowl. Add the ground turkey, Panko, 2 Tablespoons olive oil, parmesan, garlic, oregano, basil, salt, and pepper. Mix everything up just so the ingredients are combined – avoid overmixing. Roll into desired size balls – mine were slightly larger than a golfball. Place all rolled meatballs on a large baking sheet.
  • Coat a large skillet with remaining Tablespoon of olive oil and bring to medium-high heat. Lightly brown the meatballs (only 6-8 meatballs at a time) for about 1 minute on each side. Do not skip this step – read above for why. Layer the meatballs into the crockpot as you’re browning each batch. Once all browned meatballs have been added to the crockpot, pour remaining can of tomatoes on top.
  • Cover and cook on low for 6-6.5 hours. Serve with pasta, as meatball subs, plain, etc. No matter how I serve them, I always top with a little chopped fresh basil. Store leftovers covered tightly in the refrigerator for up to 1 week.

Pour on the remaining sauce. Cover and cook on high for 2 hours or low for 4 hours, until the meatballs are cooked through and reach an internal temperature of 160 degrees F. Serve warm with pasta, on buns, over polenta, or enjoy alone as an appetizer.
