16 BEAN SOUP WITH SMOKED PORKETTE SHOULDER BUTT

Mom made this soup for my dad, and I just loved it!! She would use dried navy beans, and lima beans, but I use the 16 bean pkg. because we love beans so much! She always used this smoked butt, and it was so delicious. A very flavorful soup. photos: my own

16 Bean Soup with Smoked Porkette Shoulder Butt image

Steps:

  • The prep-time includes soaking the beans 8 hours or overnight. After soaking, drain water, add fresh water to cover beans and piece of pork butt (I add butt whole, and shred the meat just before serving soup).
  • Bring beans and meat to a boil, reduce heat, and simmer uncovered for 2 1/2 hours.
  • After simmering, add onions, tomatoes, chili powder, lemon juice, and garlic. Simmer for another 30-60 minutes. Season to taste with salt and pepper. You may use contents of flavor packet that comes with beans in the last 2 minutes of cooking. (I don't use it).

1 - 20 oz. package of dried beans
1 pound(s) ham, ham hocks, smoked sausage, or pork butt (which i use)
1 cup(s) onion, chopped
1 can(s) (14.5 oz) diced tomatoes
1 teaspoon(s) chili powder
- juice from 1 lemon, or 1 tblsp. lemon juice
- 1-2 cloves garlic, minced
- water to cover beans and meat.
OPTIONAL:
- you may use 1/2 water and 1/2 chicken broth to cover beans
- you may also add 1 or 2 potatoes, cubed, to soup, along with sliced carrots

PULLED PORK SOUP

Pulled Pork Soup image

Steps:

  • Make the soup: Combine the bacon, onion, garlic, tomato paste, smoked paprika, Creole seasoning and chili powder in a food processor; pulse to make a coarse paste.
  • Heat the vegetable oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the bacon-spice paste and cook, stirring occasionally, until dark brown, about 6 minutes. Add the ribs, turning to coat. Stir in the vinegar and molasses, scraping up any browned bits from the bottom of the pot.
  • Stir in the tomatoes, chicken broth and 2 cups water. Cover and bring to a simmer, then reduce the heat to low and gently simmer, stirring once or twice, until the ribs are tender, 2 hours to 2 1/2 hours.
  • Transfer the ribs to a cutting board and shred the meat; discard the fat and bones. Position the pot halfway off the burner and increase the heat to medium. The fat will migrate to the cooler side; use a ladle to skim it off. Reposition the pot over the burner and add the shredded pork and the beans. Cook, stirring occasionally, until heated through, about 10 minutes.
  • Meanwhile, prepare the bread: Spread each slice evenly with the butter and relish. Top with the scallions and parsley. Ladle the soup into bowls and serve with the bread.

6 thick slices white bread
4 tablespoons unsalted butter, at room temperature
3 tablespoons sweet pickle relish
4 scallions, chopped
2 tablespoons chopped fresh parsley

15-Bean Soup With Smoked Pork and Greens image

Steps:

  • Place bean mixture into a large bowl and cover with water by a couple of inches. Soak 8 hours or overnight. Alternately, put them in a pot and cover with water by a couple of inches. Bring to a rapid boil for 3 minutes. Cover, turn off heat and let sit for one hour. Drain water and rinse.
  • Place soaked bean mixture in a large pot or Dutch oven with 1 quart of the water, the pork hocks, thyme sprigs, bay leaves, and crushed red pepper. Bring to a boil, cover partially. Reduce to a simmer and let cook until beans are just tender, 1-1½ hours. If using lentils, they will mostly disintegrate and thicken into the liquid. If soup seems too thick, add some more of the water.
  • Add onion, celery, garlic, and paprika to the pot. Stir in, then continue to simmer very gently for another 15 minutes. Stir in greens and continue cooking another 5-10 minutes.
  • Turn off the heat. Fish out the hocks with a long pair of tongs or a skimmer. Go ahead and remove the thyme stalks and bay leaves while you're at it and discard them. Set aside the hocks for a few minutes, until cool enough to handle. Pick the meat from the bones and add the meat back to the pot.
  • Season to taste with salt and pepper. Stir in the vinegar. Serve!

Smoked Pork, White Bean and Vegetable Soup image

Steps:

  • Heat olive oil in a heavy soup pot and add bacon until it's crisp, not burned. Remove bacon with slotted spoon and set aside.
  • Add onion, carrot and celery to pot and cook over medium heat to soften, not brown about 5 minutes or more. Add garlic, rosemary, thyme, ground pepper and stir for about a minute until garlic is fragrant.
  • Add potato, cabbage, beans and pork, stir and cook for a minute or two and then add water -I add a lot but if you want it to be more stewy than soupy, don't add as much.
  • Turn heat to high and bring to boil, turn down to low and simmer for 15 minutes or until your vegetables are cooked. Take off heat and add salt 1/4 teaspoon at a time, stirring after adding and tasting until it's seasoned.

  • In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the onions and celery and cook 4 minutes or until softened. Add the garlic and cook, stirring, an additional minute. Add in bay leaves, and thyme.
  • Add the chicken stock, water, salt, pepper, cayenne and smoked hocks. Bring to a boil; reduce heat to a simmer and cook, partially covered for 1 hour, stirring occasionally. Skim off any fat, as necessary if desired.
  • Add in the beans then continue cooking for another 2 to 2 1/2 hours or until the beans are tender (The cooking time may vary depending on the beans, but they and the smoked hock meat should be tender when finished.)
