EASY SMOKED PORK CHOPS

Use an electric smoker to help prepare your pork chops, and it will free you up for other tasks! This recipe was created for four 1/2-inch-thick chops, but it is easily scaled up or down, according to the size of your family, or the size of your smoker.

Easy Smoked Pork Chops image

Steps:

  • Preheat an electric smoker n to 225 degrees F (110 degrees C). Add water and smoking chips according to manufacturer's instructions.
  • Pat each chop dry with paper towels, then brush 1/2 teaspoon olive oil over both sides of each chop. Sprinkle dry rub over both sides and rub over the surface of each chop.
  • When wisps of smoke are seen from the smoker, place chops directly on the smoker racks. Close the door and smoke for 45 minutes to 1 hour. An instant-read thermometer inserted into the center, near the bone, should read at least 145 degrees F (63 degrees C).
  • Remove from the smoker and let rest, tented with foil, for 10 minutes.

Smoked Pork Chops With Potatoes & Sauerkraut image

Steps:

  • Mix the potatoes and the kraut.
  • Place half the sauerkraut/potato mixture in a Pyrex pie plate.
  • Spread 1 1/2 tbsp of mustard over the sauerkraut.
  • Place the chops on the sauerkraut.
  • Spread remaining mustard on the chops.
  • Cover with remaining sauerkraut/potato mixture.
  • Season with salt & pepper.
  • Put the pat of butter on top.
  • Seal with foil and bake in a 350°F oven for 45 minutes to an hour.
  • I like uncover the chops for the last 15 minutes or so to lightly brown the potato topping.

Smoked Pork Chop With Sauerkraut, Potatoes & Applesauce image

Steps:

  • Place a piece of foil in a baking dish large enough to hold the chop and other ingredients. The foil must be large enough to seal over the top of the chop
  • Place half the apple sauce in the bottom of the dish.
  • Add half of the sauerkraut.
  • Add half the potato slices.
  • Season with pepper.
  • Coat one side of the chop with half the mustard and lay it, mustard side down on the potato slices.
  • Coat the top side of the chop with remaining mustard.
  • Add remaining applesauce, then kraut and top with remaining potato slices.
  • Seal the foil over the top.
  • Bake in 350° oven for 45 minutes.
  • If you wish open the foil to brown the taters for the last 15 minutes.

Steps:

  • Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
  • Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.

This is not a recipe for a true sauerkraut lovers as it is very mild re the sauerkraut. Hey you non "Kraut" lovers you may love it! Instead of tomato juice you may substitute wine, chicken stock or apple juice, This recipe would cook nicely in a crock pot too I think. I would layer it the same and cook on low for 6 hours. Meal in one dish

  • Preheat oven to 325°F.
  • In a 1 quart size casserole put the kraut on the bottom, then the potato slices, next the carrots, tomato & onions. Pour in the tomato juice.

  • Preheat your oven to 300F. In a dutch oven, heavy pot or deep saucepan quickly brown the chops in a small amount of oil or pork fat. Remove the chops and set aside. Lower the heat and add the sauerkraut and remaining ingredients. Tuck the browned pork chops into the sauerkraut mixture, making sure they're completely surrounded to retain their moisture.
