Steps:
- Combine the graham cracker crumbs, butter, and granulated sugar and stir to thoroughly combine.
- Bring the cream to a simmer in a small pot, and then pour over the chocolate. Allow to sit for one minute before whisking together.
- Whisk the heavy cream in a chilled bowl, and then fold in the marshmallow cream.
- Layer the different ingredients in ice pop molds. Chill until completely frozen.
- TIP: Unmold by briefly running the molds under warm water.

- Place crushed crackers in a shallow bowl. Insert 1 lollipop stick into each marshmallow. Dip two-thirds of each marshmallow in melted candy coating; allow excess to drip off. Dip in cracker crumbs, covering about half the chocolate., Place on waxed paper; let stand until set. Store in an airtight container.

This is a very "kid friendly" recipe I invented when I was 9 for my parent's Super Bowl party 2 years ago. They were a HUGE hit!! They are soooooo easy to make too!

Steps:
- Crush grahm crackers in a big zip lock bag until they are like bread crumbs.
- Place crumbs in a bowl.
- Melt chocolate in a double boiler or in the microwave (my mom did this part) stirring often until smooth.
- Stick a toothpick in a marshmallow and dip in chocolate all the way then in grahm cracker crumbs half way.
- Set on wax paper to dry.
- EAT!

S'MORES CHEESECAKE POPS RECIPE BY TASTY

- In a freezer bag or food processor, crush the graham crackers to a sand-like consistency. Add the melted butter and stir until combined.
- Transfer to an 8x8-inch (20x20-cm) baking dish lined with parchment paper and firmly pack it down to form the "crust." Freeze until the cheesecake mixture is ready.
- While the crust is freezing, combine the cream cheese, sugar, and vanilla extract, and mix until smooth.
- Spread the marshmallows out on a baking sheet lined with parchment paper. Broil the marshmallows for about 1-2 minutes, watching closely to make sure they don't burn. You want them to brown up a little though to achieve a "toasted" flavor.
- Carefully scrape the marshmallows from the sheet into the cheesecake mixture. Mix thoroughly.
- Transfer the toasted marshmallow cheesecake mixture into the baking dish on top of the crust and smooth until even.
- Freeze at least 1 to 2 hours until the mixture is firm enough to cut. Remove the set cheesecake from the dish and cut into even square shapes, depending on how big you want your pops.
- Dip each stick in melted white chocolate and place into each cut square, this will help secure the sticks into the cheescake. Freeze until solid, about one hour.
- Microwave the milk (or dark) chocolate in 15 to 30 second increments to melt, stirring thoroughly each time. Add coconut oil if the chocolate seems too thick for dipping.
- Dip the set pops into the chocolate and stand upright to set (a cardboard box or piece of styrofoam works best if you don't have a stand).
- Decorate with the remaining white chocolate and crushed graham crackers.

- Mix melted chocolate and condensed milk; set aside. Beat cream cheese in large bowl with mixer until creamy. Gradually beat in 2% milk. Add dry pudding mix; beat 2 min. Stir in COOL WHIP and marshmallows.
- Spread bottoms of graham squares with chocolate mixture. Place 9 squares, chocolate-sides up, in 9-inch square pan. Cover with pudding mixture and remaining graham squares, chocolate-sides down. Freeze 4 hours.
- Remove dessert from freezer 5 min. before serving. Let stand at room temperature to soften slightly. Use serrated knife to cut dessert into 18 bars, following lines in top crackers. Insert wooden pop stick into end of each frozen bar just before serving.

- Lay out 4 graham cracker squares onto a baking sheet. Stuff each marshmallow with a Rolo and place each marshmallow on a graham cracker. Put under your oven's broiler (or, if you don't have a broiler, in a 400 degree oven) for a couple of minutes, or until the marshmallows are golden brown (if you prefer charred marshmallows, feel free to leave them in longer).

Because chocolate can burn easily, melt in 30-second increments on 50% power, stirring after each interval.
