SOFT SUGAR COOKIES IV

This Recipe is a State Fair Blue Ribbon winner. This is an easy sugar cookie recipe, you don't have to roll it out, and the cookies are soft and chewy, unlike other sugar cookies. Anybody can make these.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
  • Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

Steps:

  • Whisk together the flour, baking powder and salt in a small bowl.
  • Beat the sugar and butter with an electric mixer on medium speed in a large bowl until light and fluffy, about 5 minutes. Beat in the eggs and then the vanilla. Add the flour mixture and beat on medium-low speed until completely incorporated. Scoop out heaping tablespoonfuls of the dough, roll with your hands into balls and refrigerate until firm, about 30 minutes.
  • Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Put some sugar in a small bowl. Roll the chilled dough balls in the sugar and arrange on the prepared baking sheets about 2 inches apart.
  • Bake until the bottoms and edges are just barely golden and the tops are no longer glossy, 14 to 16 minutes, rotating the baking sheets about halfway through. Let the cookies cool on the sheets for a few minutes, then transfer them to a wire rack to cool completely. The cookies can be stored in an airtight container at room temperature for up to 3 days.

Steps:

  • Cream together the shortening and the sugar. Stir in the egg, buttermilk and vanilla.
  • Combine the flour, baking soda and salt. Add the flour mixture to the creamed mixture and stir to combine. Chill dough in the refrigerator for 1 hour. Drop mixture by rounded teaspoons 2 inches apart on a lightly greased baking sheet. If desired sprinkle tops of cookies with white sugar before baking.
  • Preheat oven to 400 degrees F (205 degrees C).
  • Bake at 400 degrees F (205 degrees C) for 7 to 9 minutes or until set.

Steps:

  • Cream butter and sugars. Add eggs one at a time, sour cream, and vanilla. Mix until fluffy.
  • In a separate bowl, sift or whisk 5 cups flour, cornstarch, baking powder, baking soda and mace.
  • Mix dry ingredients into creamed ingredients 1/3 at a time. Divide into 2 or 3 discs or rolls. Cover each in plastic wrap. Chill for at least one hour.
  • Roll out to 1/4 inch thickness. Cut into 2-3 inch circles or desired shapes.
  • Bake at 300 degrees F for 8-12 minutes, until just beginning to brown on the bottom. Cool on pan for 5 minutes, transfer to cooling rack for 10-15 more minutes, until completely cooled.
  • Frost with buttercream frosting, and decorate with sprinkles. Allow frosting to set before storing in an air-tight container.

  • For the cookies: In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, scraping down the bowl after each addition. Add the vanilla and mix well. In a separate medium bowl, combine the flour, baking powder, and salt. Give it a good stir with a whisk.   • After the dough has chilled, scoop scant quarter-cupfuls of the dough. Roll into balls and flatten slightly. Place on the prepared pans 2-3 inches apart. Bake 10-12 minutes or until the cookies are set and the edges just begin to brown. Do NOT overbake! Allow the cookies to cool on the pan for 4-5 minutes then transfer to a cooling rack to cool completely.
  • Meanwhile, prepare the frosting: Place the powdered sugar in a medium bowl. Add the melted butter, vanilla, and 7 tbsp. of milk. Mix until well combined, adding additional milk, 1 tsp. at a time, only if necessary. Tint the frosting with your choice of food coloring, if desired. Frost cooled cookies and top with sprinkles if desired.
