These are rich and moist cake-like cookies. Frost with your favorite buttercream frosting. This is a large recipe that can be easily reduced. Batter must be chilled overnight. Cook time does not include chill time.

- Cool and frost with you favorite buttercream frosting. Try chocolate, lemon, or orange buttercream for a variation.

- In small bowl, combine flour, baking soda, and salt.

- Reduce speed to low; beat in flour mixture just until blended.

- Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets.
- Sift flour, baking powder, baking soda, salt, and nutmeg together into a bowl.
- Beat 1 1/2 cups sugar and butter together in a bowl using an electric mixer until smooth and creamy. Beat in eggs, 1 at a time, beating well after each addition; blend in sour cream and lemon extract. Gradually stir flour mixture into creamed butter mixture until dough is combined.

- Cream shortening, sugar, egg, and vanilla.
- Blend dry ingredients and add to creamed mixture alternating with cour cream. Measure flour by dip level, pour method or by sifting.
- Refrigerate dough for at least 1 hour to make easier to roll out.
- Roll dough out 1/4" thick on well-floured surface.
- Cut with 3-1/2" (9cm) round cookie cutter or other shapes.
- Place on baking sheet. Can sprinkle with colored baking sugar at this point or wait and frost when cookies have cooled down.
- Bake at 350F (175C) for 8-10 minutes.

- Preheat oven to 200 deg Celsius. Less for fan-forced. Line 2 trays with non-stick paper.
- In a small bowl cream together butter, sugar and vanilla.
- Add egg yolk & beat well.
- Sift together flour, soda, salt and nutmeg.
- Fold half the sour cream and half the dry ingredients into the butter mixture. Fold in remaining halves. Mix well to combine.
- With floured hands roll teaspoonfuls of mixture into small balls and place on prepared trays. Press lightly on top with a fork.
- Bake in oven for 8 to 10 minutes or until pale golden in colour. Cool slightly on trays before moving to wire racks to cool.
- Dip tops of biscuits in the Citrus Glaze.
- Citrus Glaze: Combine icing sugar, juices and orange rind in a cup. Place cup in saucepan of hot water, beat with fork until glossy. Pour into a saucer to make icing the biscuits easier.

ROLLED SUGAR COOKIES
Steps:
- For the cookies: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a stand mixer fitted with the paddle attachment, cream together the granulated sugar and butter until fluffy and pale. Add the eggs and mix until incorporated, then add in the vanilla and finally add the sour cream, mixing until well blended.
- Sift together the flour, baking powder, baking soda and salt. With the mixer set to low speed, add the dry ingredients to the butter and mix until well combined. Chill in the refrigerator for about 20 minutes.
- Dust a clean surface with flour. Roll out the dough and cut into shapes with cookie cutters. Place each on the prepared baking sheet and bake for 12 minutes. Cool the cookies completely.
- For the frosting: In a stand mixer fitted with the whip attachment, whip the butter until soft and creamy. Add the confectioners' sugar, milk, vanilla and salt. Cream together until fluffy. Spread the frosting over the cookies, about 2 heaping tablespoons per 3-inch cookie.

GREAT GRANDMA'S SOUR CREAM DROP COOKIES
This recipe was on a card tucked into my mom's recipe box; it's pretty similar to a number of variations that seem to be from the 1930s. A note said "flavor with whatever you like" and of all the flavors I played around with, I thought lemon zest balanced the sweet dough the best. These bake up into tender little cakes that make a great base for whoopie pies. Once baked, they freeze well (thaw for an hour or so on the counter to eat), but start losing their tenderness after more than one day at room temperature.

SOUR CREAM DROP COOKIES
This heirloom cookie was originally made with homemade sour cream stored in a crock in the basement. The dough for drop cookies is soft enough to drop from a spoon. Use an ordinary teaspoon rather than a measuring spoon. Use slightly rounded spoonfuls rather than level ones. Push the dough off the spoon with a rubber spatula or another spoon. Make the drops all the same size so they will bake evenly. Bake them just until done. Remove immediately from baking sheet. If cookies are left for only a few minutes on a hot sheet, they will continue to bake and will be overdone and dry.
