SOUTHERN BBQ SAUCE

This recipe makes a loose barbeque sauce that can be brushed on during cooking. Also can be used as a marinade. We use it when we cook a whole pig; scale the recipe to make 5 gallons for a whole pig.

Southern BBQ Sauce image

Steps:

  • In a large, clean tub, mix together the cider vinegar and ketchup. Season with chili flakes, cayenne pepper, black pepper, and paprika. Mix well, and store in air tight containers. This does not need to be cooked.

1 ¼ gallons apple cider vinegar
1 (28 ounce) bottle ketchup
5 ½ ounces chili pepper flakes
4 ounces cayenne pepper
2 ounces ground black pepper
3 ounces ground paprika

SOUTHERN SAUCE

This sauce is great on just about anything. It can be used as a dressing, dipping sauce, and it can also be used for cheeseburgers.

Steps:

  • In a small bowl, mix together the mayonnaise, mustard and sugar until well blended. I like to stir 50 times clockwise, and 50 times counter clockwise to get the sauce nice and thick.

SOUTHERN PEPPER SAUCE

Pepper Sauce is a Southern Condiment (Not to be confused with Hot Sauce) that is primarily used on Greens, Southern Peas and Cornbread and just about anything you want to add a bit of spice. I like to have some red and some green peppers so the bottle looks better on the table but that is optional. Wear plastic gloves when handling peppers. You can also add a teaspoon of Olive Oil if you like some extra heat.

Steps:

  • Tightly pack a clean decorative Glass Jar (Empty Malt or Red Wine Vinegar Jars work great) with the peppers.
  • Bring vinegar, salt and sugar to a boil over medium heat, stirring until salt and sugar are dissolved (about 3 minutes).
  • Remove from heat and let stand for about 5 minutes.
  • Pour hot vinegar mixture over the peppers.
  • Leave about 1 inch from the top of the jar.
  • If it starts getting low you can add a bit more of the Vinegar mixture.
