NANA'S SOUTHERN COLESLAW
Just an old family recipe that I have been told is reminiscent of KFC coleslaw. You be the judge! To speed things up I sometimes just buy an already shredded bag of cabbage with carrots in it and then just chop it a little finer.

Steps:
- Mix cabbage, carrots, and onion in a large salad bowl. Whisk mayonnaise, sugar, milk, buttermilk, lemon juice, vinegar, salt, and black pepper in a separate bowl until smooth and the sugar has dissolved.
- Pour dressing over cabbage mixture and mix thoroughly. Cover bowl and refrigerate slaw at least 2 hours (the longer the better). Mix again before serving.

V-8 SALAD DRESSING
This goes on vegetable OR fruit salads! If you warm this dressing, it is wonderful on broiled or grilled chicken or fish.

SOUTHERN STYLE COLE SLAW IN V8 JUICE DRESSING
This slaw is a nice change from those with mayo. It's also quite easy and great for this hot weather. Found in the local paper. Prep time does not include chilling time.

Steps:
- Wash and remove the outer leaves of the cabbage. Cut the cabbage into eighths and remove the core. Set aside.
- Peel the onion and cut into eighths. Using a food processor fitted with the steel blade attachment, process the cabbage and onion, in manageable batches, until chopped finely. Scrape into a large container with a tight fitting lid. Set aside.
- In a 1 quart or larger saucepan, combine the vinegar, sugar, V08, salt and celery seed. Bring to a boil and stir until the sugar is melted.
- Pour the hot vinegar mixture over the cabbage and toss to coat well. Cover and refrigerate until completely chilled, at least 4 hours.
