QUICK AND EASY NO-BAKE PEANUT BUTTER SOY PROTEIN BARS
These are high in protein, relatively low in calories, and made with wholesome ingredients. For a healthy dessert cookie, drizzle with melted chocolate chips.

Steps:
- Line an 8 inch square pan with foil or parchment paper and spray with cooking spray.
- Place soybeans in a food processor and pulse to chop. Alternatively, you may leave them whole or crush them slightly in a bag.
- Combine soy beans, brown rice crisp cereal and TVP. Toss with salt.
- In a microwave-safe mixing bowl, combine peanut butter, brown rice syrup and evaporated cane juice (or sugar). Heat on high in microwave for 1 minute, stopping to stir halfway through.
- Dump crunchy soy mixture into peanut butter mixture and stir until well coated. Press mixture tightly into pan.
- Chill for at least 2 hours or until firm.
- Score into 8 bars.

DECADENT PEANUT BUTTER SOY ICE CREAM
This is my favorite ice cream recipe -- rich and decadent, a true comfort food. Most soy ice cream recipes are low-fat, but not this one! It can also be made with regular milk, although I have never tried it.

- In a large saucepan, whisk together sugar, cornstarch, soy milk, and peanut butter.
- Bring to a boil over medium heat, whisking frequently, and boil whisking constantly for one minute; remove from heat.
- Whisk several large spoonfuls of hot milk mixture into egg, then whisk egg back into saucepan of hot milk.
- Return saucepan to heat and cook over medium flame, whisking constantly, until mixture returns to a boil. It will have thickened slightly.
- Refrigerate until cold (I first cool by carefully putting the pan into a sinkful of cold water). The cooking time does not take the cooling time into account.
- Freeze mixture in ice cream maker according to manufacturer's directions. Add chips towards the end of the freezing process.
PEANUT BUTTER NOODLES
A super quick and easy noodle dish that's fresh, nutty and very easy to customise. *The amount of ingredients that have been provided are guides, I normally add the ingredients by eye and to taste, so feel free to add as much or as little of each ingredient as you like!*

- Add a splash of oil, the lime juice, soy sauce, chilli powder, chicken stock cube and peanut butter to a frying pan. Pour in some boiling water and mix to create a sauce. Don't worry about how much water you add, if will reduce down.
- Slice the spring onions and finely chop the coriander. If you are using chicken, cut the chicken into bite-sized pieces. If you are using stir-fry vegetables, prep them now.
- Heat the sauce on the hob. If using chicken, add the chicken now so it absorbs the flavour while cooking and doesn't dry out.
- Once the chicken is cooked, add the noodles, most of the spring onions and coriander (save the rest for later). If you are using stir-fry veg, add them now. Cook the noodles for as long as the packet recommends, leave the sauce to reduce to your preference if needed.
- To serve, put the noodles in a preheated dish and sprinkle the remaining spring onions and coriander over the top.
THAI PEANUT BUTTER SAUCE
This is an easy to make version of Thai peanut sauce which uses ingredients that most everyone has on hand. It's great with grilled shrimp or fish.
