- Preheat oven to 350°. Cook spaghetti according to package directions for al dente. Meanwhile, in a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef into crumbles; drain. Stir in pasta sauce and seasoned salt; set aside., In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat., Place half of the spaghetti mixture in a greased 13x9-in. or 3-qt. baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers. Place baking dish on a rimmed baking sheet., Cover and bake for 40 minutes. Uncover; bake until heated through, 20-25 minutes longer. Let stand 15 minutes before serving. If desired, sprinkle with basil.

- Heat oven to 375°F.
- Cook spaghetti as directed on package, omitting salt. Meanwhile, remove and discard casings from sausage if necessary. Crumble sausage into medium skillet; cook on medium heat until done, stirring frequently. Drain sausage; return to skillet. Stir in pasta sauce; simmer on medium-low heat 5 min., stirring occasionally.
- Drain spaghetti; place in large bowl. Add egg, Parmesan and 1 cup mozzarella; toss to coat. Spoon into 8-inch baking dish sprayed with cooking spray; top with sausage mixture and remaining mozzarella.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 12 minutes. Drain.
- Heat a large skillet over medium heat; cook and stir onion and bell pepper until tender, about 5 minutes. Transfer vegetables to a large bowl. Return skillet to stove top and increase heat to medium-high. Cook and stir ground beef in skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Transfer beef to the same bowl as the vegetables.
- Stir spaghetti, spaghetti sauce, Cheddar cheese, cream of mushroom soup, mushrooms, olives, oregano, and sugar into beef mixture. Pour spaghetti mixture into prepared baking dish and sprinkle with mozzarella cheese and Parmesan cheese.

SPAGHETTI BAKE
This is a lasagna alternative I found in an old issue of "Canadian Living". It was from an article spotlighting personal chefs and make-ahead dishes. Bake in two 9x9-inch dishes or one very large casserole. CHEF NOTE: After making this several times, I prefer to make the "topping" more cheesy. I reduce flour to 1/4 cup and reduce milk to 2 cups, increasing cheese to a generous 1 cups mozzarella cheese with another half cup or more sprinkled over top.

Steps:
- In a large pot, cook sausage over medium-high heat, breaking up as it cooks with a spatula.
- Cook until it is no longer pink.
- Drain off fat.
- Add onions, garlic and basil and cook for another 5 minutes to soften onions.
- Add mushrooms and cook until liquid is evaporated, about 5 minutes.
- Add tomatoes, tomato paste and pepper; bring to a boil.
- Reduce heat and simmer for about 15 minutes until most of liquid is evaporated.
- Stir in spinach.
- Meanwhile, for topping: in saucepan, melt butter over medium heat.
- Whisk in the flour and cook, whisking constantly for 1 minute.
- Whisk in the milk.
- Cook, whisking constantly for 12 to 15 minutes until sauce is thickened.
- Add mozzarella cheese, salt and pepper.
- Meanwhile, for noodles: cook spaghetti in large pot of boiling salted water for 5 minutes or until tender but firm.
- Drain and add to MEAT sauce; toss to coat.
- Spread in 2 greased 8-inch square glass baking dishes (this is what original recipe says, but not adequate--try 2 9 x 13-inch pans instead); pour topping over and then sprinkle with Parmesan cheese.
- Bake in 375F° oven for 30 to 40 minutes or until bubbly and golden.

SPAGHETTI SQUASH TOMATO BAKE
Steps:
- Preheat the oven to 400 degrees F.
- Cut the spaghetti squash in half lengthwise and scrape out the seeds with a spoon. Drizzle 2 teaspoons extra-virgin in each of the squash halves and sprinkle with salt. Place them flesh-side down on a baking sheet. Roast until you can fluff the squash easily with a fork, 45 to 50 minutes.
- Flip the squash halves and fluff the "spaghetti" strands with a fork, then season with salt. Pour 2/3 cup sauce over each of the squash halves, and top each with 1/2 cup shredded mozzarella. Bake until the cheese is browned and bubbly, another 25 minutes. (You can flip the oven to the broiler at the last minute for extra cheese browning!)
- Garnish with basil and serve.

- Bring a large pot of salted water to a boil.
- Heat a second large pot over medium-high heat. Add the beef, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring to break the meat up, until browned, about 4 minutes. Add the onions, bell peppers, garlic and a generous pinch of salt and pepper and cook, stirring occasionally, until tender, about 10 minutes. Stir in the crushed and diced tomatoes, sugar and oregano and bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, until thickened, about 30 minutes.
- Meanwhile, cook the spaghetti for 2 minutes less than the time indicated in the package directions. Strain well. Preheat the oven to 350 degrees F.
- Cover the bottom of a 13-by-9-by-2-inch pan with a third of the sauce. Add half the pasta and a third of the Cheddar; repeat the layers and add the last of the sauce; reserve the last of the Cheddar.
- Bake for 30 minutes. Top with the remaining Cheddar and continue baking until it melts and the sauce bubbles, about 5 more minutes. Let cool in the dish for at least 10 minutes. Garnish with the parsley before cutting into squares.
SPAGHETTI SQUASH BAKE
Steps:
- Preheat oven to 350 degrees. Slice squash in half and place fleshside down in a baking dish.
- Add 1/4-inch of water. Bake for 40 minutes, or until tender and remove. Rake squash with a fork, creating "spaghetti" strands. Spoon on sauce, mozzarella, and basil. Place back in oven and bake until cheese begins to bubble. Serve warm

Steps:
- Preheat oven to 350 and PAM a 13x9 deep baking dish.
- In large skillet, brown ground beef.
- In large pot cook pasta to al dente'.
- When beef is cooked, drain and add spaghetti sauce and hot water (I always dump the water in the jar and shake it up to get the last bit of sauce out before adding to the pan).
- Add garlic and veggies and simmer about 10 minutes.
- When pasta is done, drain in a colander and rinse with hot water, let sit temporarily.
- In pasta pot, melt margarine.
- Stir in parmesan cheese, then add pasta back into pan.
- Beat eggs with milk and toss with pasta mixture.
- Press pasta in pan evenly.
- Top with sauce mixture, spreading to the edges.
- Bake at 350 for 15 minutes.
- Top with cheeses and bake additional 15 minutes until cheese starts to melt and brown.
- Remove from oven and let sit for 10 minutes for easier cutting.
- Cut into squares.
- This makes a lot and freezes well in individual squares for lunches.
TOMATO & MOZZARELLA SPAGHETTI BAKE

- Heat oven to 200C/180C fan/gas 6. Heat the oil in large pan, add the garlic and fry for 1 min. Add the tomatoes, chilli and seasoning, bring to the boil and simmer for 10 mins.

- Preheat oven to 350°F Grease a 13x9-inch baking dish; set aside.
- Boil spaghetti noodles to al dente according to package; drain.
- While spaghetti is boiling, brown the ground beef with the onion; drain and return to skillet. Add the spaghetti sauce to the meat in the skillet.
- Add the hot cooked, drained spaghetti to the skillet; stir well. Add salt and pepper to taste. Pour into the prepared baking dish.
- In a saucepan, melt butter; add the flour, stirring constantly to make a roux. Slowly whisk in the evaporated milk.
- Turn heat to low and stir in the parmesan cheese and 1/2 cup only of the mozzarella. stir constantly until melted and smooth.

- Sprinkle with the remaining 1 cup of parmesan cheese and then the oregano.
- Bake; uncovered, for 30-35 minutes or until bubbly and starting to brown on top.
SPAGHETTI CASSEROLE
A friend of mine brought some of this into work for me to try and I had to get the recipe. It's delicious! I submitted this exactly how it was given to me. I used thin spaghetti (my preference), melted the cream cheese almost all the way before mixing with spaghetti, mixed the ground beef with tomato sauce before layering (by mistake).

- The recipe calls for a 9x13 casserole, but I usually split it between two 8x8 pans (increasing the spaghetti, beef, sauce and mozarella slightly if needed) and freeze one of them for another time.
- Cook the spaghetti and drain, but don't rinse.
- Put it right back in the warm pot and add the cream cheese.
- Blend the cream cheese until melted with the spaghetti and then blend in the sour cream.
- Put spaghetti mixture into greased pan.
- Layer some of the mozarella, then the beef, then a little more mozarella.
- Spread the spaghetti sauce across and then put the rest of the mozarella on top.
- Bake at 350 (or maybe 375?) for 30- 35 minutes- until a knife comes out clean.
- Let it stand for 5 or 10 minutes.

CLASSIC BAKED SPAGHETTI
I looked everywhere for an easy baked spaghetti that did NOT use mushrooms or cream of mushroom soup (husband is allergic). I am happy to say I found it.
