SPAM AND EGGS
I'm on a diet where I have to eat over twice as much protein as carbohydrates. This was hard for a rice and biscuits lover such as myself. After days of eating tuna and eggs (not together), I came up with this recipe. It's quick and tasty.

Steps:
- Heat a non-stick skillet over medium heat. Pour in eggs, then Spam. Cook, stirring, until eggs are nearly done, then sprinkle cheese over, and stir until melted.

Steps:
- Dice the onion.
- Melt the butter, medium heat, in a very large frying pan or a chicken fryer.
- Dice the Spam (about 1/2" cubes).
- Saute the onion and the peppers until onions are soft.
- Add the spam to brown, stir every few minutes to get all sides. Add seasoning a little at a time while browning, every time you stir.
- While browning, scramble the eggs.
- When spam is browned, add the eggs to the pan. Stir regularly to promote even cooking of the eggs and thorough mixing of the ingredients.
- When about 2/3 done, add the cheese on top and cover the pan. Let the cheese melt as the eggs finish.
- Serve with Heinz 57 or Barbecue Sauce.

- In bowl, whisk together eggs and milk.
- On greased skillet over medium-high heat, pour egg mixture.
- Cook, pulling mixture aside with spatula to allow liquid to contact skillet surface, until desired doneness.
- Add spam to skillet.
- Reduce heat; gently stir mixture until meat is heated.
- Garnish with chives.
WWII SPAM AND EGG SANDWICH
My aunt remembers my grandmother making these for the family during World War II when many food items were rationed. Good at any time of day--breakfast, lunch, dinner, or midnight snack!

Steps:
- Melt butter in a small skillet over medium-high heat. Saute the onion in butter until soft. Mash up the slice of luncheon meat with a fork, and add it to the skillet. Cook for 2 or 3 minutes, until browned. Pour the egg into the skillet so that it covers all of the meat and onion. Cook until firm, then flip to brown the other side.
- Place the egg and meat onto one slice of the bread and top with cheese and tomato if desired. Place the other piece of bread on top. Bread can also be toasted first.

I had a half a can of SPAM© leftover from Recipe#257325.And this is what I came up with.Serve this with toast or biscuits along with some fruit and you will have a breakfast your whole family will enjoy.Submitted to "ZAAR" on October 6th,2007.

Steps:
- In a medium sized bowl,scramble eggs until pale yellow in color and fluffy.
- Set eggs aside.
- In a medium sized skillet over medium heat add oil.
- When oil is hot but not smoking add onions.
- Saute' onions for 3 to 5 minutes,add potatoes,and sprinkle with salt and pepper.
- Cook potatoes until lightly browned.
- Add SPAM© and cook until meat has a slightly browned color.
- Pour eggs over meat and potatoes,let eggs sit on potatoes for about 3 to 5 minutes.
- Stir eggs into potatoes until desired doneness for eggs is reached.
SPAM AND EGG SALAD/ SPREAD
My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

- Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.
