WATERMELON SHANDY

- For the watermelon ice cubes: In a blender, puree the watermelon with the Simple Syrup and lime juice. Pour into a silicone ice cube tray and freeze about 8 hours.
- For the shandy: When the ice cubes are ready, cut a slight slice off the bottom of the watermelon so it sits upright. Carefully cut across the top quarter of the watermelon, leaving three-quarters left. Scoop out the watermelon with an ice cream scoop, reserving the insides for another use (or use to make the watermelon ice cubes). Cut a V-shaped notch in one side of the watermelon.
- Put 4 watermelon ice cubes in the hollowed-out melon. Pour in the lemonade until it fills it about three-quarters full. Quickly immerse the beer bottle into the lemonade, leaning it in the notch and making sure the opening of the bottle hits the watermelon floor.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil. Cook, stirring, until the sugar dissolves. Remove from the heat and let cool completely. Keep covered in the refrigerator up to 1 month.
WATERMELON SLICES WITH LIME-HONEY SYRUP

- Place lime juice and honey in a saucepan and heat on the grates of a hot grill or side burners. Bring to a boil and let boil for 2 minutes. Remove from the heat and chill. Place watermelon slices on a large platter and drizzle with the lime syrup and garnish with mint.
SPICY & SAVORY SWEET HONEYDEW MELON
Mummmm, I had this at my neighbors bbq. It was excellent. I begged for the recipe until she gave it up. It's so simple, I'm sharing it with all of you. Hope you will enjoy it as much as we do. Please note cooking time is chilling time.

- In a small pot boil water and sugar, once boiling, add the basil stems, chili and lemon zest and remove from heat.
- All the syrup to cool to room temperature.
- Then you can refrigerate the simple syrup for anywhere 15 minutes or up to 24 hours. The longer it sits the more flavor you will get.
- Remove the basil stems from the syrup and discard.
- In a large bowl toss the melon with the chilled syrup.
- Add the remaining salt, the white pepper if using and the basil leaves, toss gently .
- Drizzle with olive oil and serve.

When I saw it post on allrecipes.com was reminded of a delicious watermelon jalapeno gazpacho I had tried once years ago and though I just had to bring over here.

- Cut the lemon into 6 thin slices and press 2 cloves into each slice.
- Put the lemon slices, cinnamon sticks and honey into a saucepan.
- Bring to a boil, stirring occasionally.
- Place two lemon slices and 1 cinnamon stick into each hot jar and then ladle honey into the jars, leaving 1/4 inch headspace. Adjust two-piece caps.
- Process for 10 minutes in a boiling-water canner (adjust for altitude).

- First, remove all green outer rind and red meat from watermelon rind and discard, retaining only the white part. Force remaining white rind through food chopper, using coarse blade. Measure it, there should be 6 cups. Put in a large saucepan or stockpot with water.
- Cook slowly, uncovered, for 25 minutes, or until melon is translucent. Add sugar and lemon. Tie spices in a cheesecloth bag and add with salt to first mixture. Cook slowly, stirring frequently, for 1 hour, or until thickened. Remove spice bag, ladle mixture into hot sterilized jars; seal.
- Yield: about 2-1/2 pints.
