- Bake fries as directed on package. Meanwhile, mix CHEEZ WHIZ, chiles and chili powder in microwaveable bowl until blended.
- Spread fries onto platter. Microwave CHEEZ WHIZ mixture on HIGH 1 to 2 min. or until heated through, stirring every 30 sec.
- Drizzle CHEEZ WHIZ mixture over fries. Sprinkle with onions.

Meanwhile, cook 1/2 thinly sliced onion, 1 tablespoon hot paprika and 1 teaspoon salt in 2 tablespoons butter in a large skillet over medium-high heat, stirring, 4 minutes. Add 1 minced garlic clove and cook 2 more minutes. Remove from the heat and add 3 chopped scallions and 2 tablespoons chopped parsley. Add the fries and toss to coat.

- Preheat an oven to 375 degrees F (190 degrees C). Grease a large baking sheet.
- Fill a large bowl with cold water, add the potatoes, and allow to soak for 10 minutes.
- Whisk together the oil, vegetable juice cocktail, chili powder, ground cumin, onion granules, garlic powder, cayenne pepper, sugar, and salt in a large bowl. Drain the potatoes, and pat dry with paper towels. Toss the potatoes with the oil and spice mixture; stir until evenly coated. Arrange fries in a single layer on the prepared baking sheet.

SPICY CLASSIC HOME FRIES

- Bring a large pot of water to a boil, add 2 tablespoons of salt and the potatoes, bring to a boil and cook, until just tender, about 8 minutes. Drain well in a colander.
- Heat 1 tablespoon of oil in a large cast iron skillet over medium heat until it begins to shimmer, add the onion and cook, stirring a few times, until soft and lightly golden brown, about 5 minutes. Remove the onions to a plate.
- Add the remaining oil and the butter to the pan, increase the heat to high and heat until the butter has melted and the oil is sizzling. Add the potatoes and chile powder and season with salt and pepper and immediately press down into an even layer on the bottom on the pan, using a wide metal spatula. Cook, pressing down occasionally and not turning, until the potatoes on the bottom are golden brown and crusty, about 5 minutes. Turn the potatoes over, press down again and cook until the potatoes on the bottom are golden brown, about 5 minutes longer. - Wash and dry the potatoes. Cut them into french-fry sized strips – about 3/4 inches wide. Pour egg whites over fries, pour seasonings over fries, and stir to combine.
- Place a large sheet of parchment paper over each baking sheet (I used 2 baking sheets). Scoop the potatoes onto the parchment paper. Do not dump the whole bowl out because there will be some leftover egg whites in the bottom of the bowl and you don’t want that on the baking sheet. Bake for 10 minutes, take the baking sheets out and remove the parchment paper and slide the fries directly onto the baking sheet. They should slide off easily. Bake for another 5-8 minutes; remove from oven and stir, being careful to keep the shape of the fries. Continue this (bake, stir, bake, stir) until the fries have a puffy golden brown outside that is dry to the touch. They should be a little crispy but soft on the inside. Total bake time will be about 25-35 minutes.
- For the cheese sauce, melt the cream cheese in the microwave for about 30 seconds. Whisk in the milk, garlic, seasoning salt, and oil until smooth. When smooth, add the cheese. Melt for another 20-30 seconds and whisk again until totally smooth, adding more milk to thin out the sauce to your desired consistency. Pour over fries and enjoy!
