SPICED ALMOND BUTTER CANDY

- Line a 15x10x1-in. pan with foil and grease the foil with butter. In a large bowl, combine the almond butter, almonds, cinnamon, nutmeg, vanilla and allspice; set aside., In a large heavy saucepan, combine the sugar, corn syrup and water; cook and stir over medium heat until sugar is dissolved. Bring to a boil. Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook, without stirring, until a candy thermometer reads 300° (hard-crack stage)., Remove from the heat. Immediately stir in almond butter mixture and baking soda. Spread into prepared pan. Cool completely. Break candy into pieces. Drizzle with chocolate. Let stand at room temperature until set. Store in airtight containers.

CHOCOLATE ALMOND GRANOLA

Steps:
- Roughly chop the dates and add into a blender along with the boiling water. Cover and set aside to soak for 20 minutes.
- Preheat your oven to 300 degrees F (150 degrees C) and lightly grease a large, rimmed baking sheet with cooking spray.
- Add the almond butter, cocoa powder, maple syrup to taste, oil, vanilla and salt to the blender and blitz until smooth (a few bits of dates is totally fine).
- Stir the oats and almonds together in a large bowl and add the cocoa mixture. Mix very well until evenly combined, then transfer to the prepared baking sheet. Spread the mixture into an even layer and bake until crisp and crumbly, stirring about halfway through, 50 minutes to 1 hour.
- Cool the granola to room temperature, then break any large chunks up and transfer to a resealable container and store at room temperature for up to 1 month. Serve with milk, on yogurt or enjoy out of hand.
SPICY CHOCOLATE ALMOND BUTTER
This makes a great dip for strawberries, bananas and other fruit, cookies, crackers, etc. Enjoy! Adapted from the California Almond Board.

- In a food processor combine almonds, almond oil, cocoa powder, and sugar.
- Blend until smooth.
- Sprinkle in chili powder and blend to combine.
- For best flavor, chill for 24 hours prior to serving.
- Serve with vanilla cookies, or fruit, or crackers, etc.

HOT AND SPICY ALMONDS
I adopted this recipe a while ago and have changed the amount of salt. The original recipe called for 1/2 cup which seemed far too much.

- Preheat oven to 350 degrees.
- Melt the butter in a medium-size saucepan.
- Add worcestershire sauce, cumin, sugar, garlic powder and cayenne pepper.
- Cook over low heat for 2 - 3 minutes.
- Add the nuts and stir to coat evenly with seasonings.
- Spread the nuts on an ungreased baking sheet and toast for 15 minutes, turning occasionally.
- Remove from the oven and toss with sea salt.
- Cool.

- Preheat oven to 325°. In a small bowl, combine the first 7 ingredients. In another small bowl, whisk egg white until foamy. Add almonds; toss to coat. Sprinkle with spice mixture; toss to coat. Spread in a single layer in a greased 15x10x1-in. baking pan. Bake for 30 minutes, stirring every 10 minutes. Spread on waxed paper to cool completely. Store in an airtight container.
