Steps:
- Saute onion and peppers in oil.
- Add garlic, tomatoes, sugar, salt and pepper.
- Reduce heat and simmer.
- Add sausage and simmer covered about 20 minutes.
- While sausage and tomatoes are simmering, cook penne according to package directions.
- Add basil, parsley and penne to sausage mix and toss to combine.
PENNE WITH CORN AND SPICY SAUSAGE

Steps:
- Bring a large pot of salted water to a boil over medium-high heat. Add the penne and cook according to package directions or until al dente. Drain well, reserving 1/2 cup of the pasta water.
- Meanwhile, heat a medium skillet over medium-high heat. Add the olive oil and sausage; cook for about 5 minutes, breaking up the sausage into bite-size pieces with a wooden spoon. Add the shallots and cook for another minute. Stir in the corn and salt, and cook, stirring often, until the corn is warmed through, another 2 minutes. Transfer the mixture to a large bowl.
- To the bowl, add the mascarpone, chile paste and the hot pasta and reserved pasta water. Add the Parmesan directly over the untossed hot pasta. Using a large serving spoon, toss everything together well. Add the basil and toss again. Serve with additional Parmesan if desired.
PENNE WITH SPICY SAUSAGE
Steps:
- Heat the oil in a large saucepan over medium heat. Add the sausage and cook, stirring occasionally, until browned. Transfer to a bowl.
- Add the onion to the saucepan and cook, stirring, until coated with the sausage drippings. Reduce the heat slightly and add the garlic, oregano and red pepper flakes. Stir until the mixture has softened, about 5 minutes.
- Add the crushed tomatoes and tomato sauce to the onion mixture. Stir until fully combined. Season with salt and pepper and stir in the cooked sausage. Reduce heat to low and gently simmer the sauce, stirring occasionally, until slightly thickened, about 25 minutes.
- Meanwhile, bring a large pot of salted water to a boil over high heat. Add the penne and cook until just tender, 8 to 10 minutes. Drain and transfer to a serving bowl. Add the sauce, sprinkle with Parmesan, if using, toss and serve.

SAUSAGE & PEPPERS PENNE ALFREDO
Penne pasta served with hot Italian sausage, bell peppers, and onions in a creamy Alfredo sauce. This is a recipe that I created on the fly. Ingredient measurements are "best guess" because I pretty much just threw everything in to taste. Feel free to adjust to your taste and enjoy!

Steps:
- Slice sausage into 3/4 inch slices.
- Cut onions and peppers in to thin strips (julienne slices).
- Mince 3 to 4 cloves of garlic or measure out 1 Tbsp of pre-minced garlic.
- Chop basil into small strips (about 1 inch in length).
- Prepare pasta based on packaged instructions.
- Fry sausage in oil over medium-high heat until all pieces have turned brown.
- Add peppers and onions, season with salt and pepper to taste, and fry with sausage for 2 minutes.
- Add garlic and fry for 1 more minute.
- Dust the mixture with 2 Tbsp of flour (this step is optional, and will create a thicker sauce) and stir for about 1 1/2 to 2 minutes.
- Add chicken broth and stir mixture for about 30 seconds.
- Turn heat down to medium-low and add cream. Stir to combine.
- Slowly bring cream to a boil and let simmer for 5 minutes over medium-low heat, stirring occasionally.
- Add Parmesan cheese and stir until cheese is melted into mixture.
- Garnish with fresh basil and serve over pasta.

- 1. Cook pasta according to package directions in Professional (4-qt.) Casserole; drain and keep warm.
- 2. Meanwhile, cook sausage in Family (12-inch) Skillet over medium-high heat
- 14-16 minutes or until sausage is lightly browned and no longer pink, turning occasionally. Remove sausages from skillet; cut diagonally into 1-inch pieces and set aside. Cut bell peppers into 1/4-inch strips using Chef’s Knife. Coarsely chop onion using Food Chopper.
- 3. In same skillet, cook bell peppers, onion and garlic pressed with Garlic Press over medium heat 6-8 minutes or until peppers are crisp-tender, stirring occasionally. Add sausage, tomatoes, tomato sauce and seasoning mix. Cook and stir 1-2 minutes or until heated through.
- 4. Place pasta in large bowl; pour sauce mixture over pasta, tossing to coat.
