SPICY BROWNIES!
I LOVE the spicy/chocolate combo, but I didn't always want it in a chocolate bar. So I decided to make some rich, spicy brownies instead! I took my favorite brownie recipe & added cinnamon & cayenne. These have a nice warmth & decadent chocolate flavor- enjoy!

Steps:
- Preheat the oven to 350 degrees Farenheit.
- Grease an 8 inch sqare pan, if not using a nonstick pan.
- In a small mixing bowl, sift together the ground chocolate, flour, baking powder, salt, cinnamon, & cayenne. Set aside.
- In a medium mixing bowl, combine the eggs, sugar, & vanilla extract. Add the melted butter.
- Gradually add the dry ingredients to the egg mixture, about 1/4 at a time, until combined.
- Stir in the chocolate chips & nuts (optional).
- Spread the batter evenly into the pan (the batter is pretty thick).
- Bake for 25 to 30 minutes.
- Cool the pan on a wire rack before cutting into squares.

- Preheat oven to 350; prepare 9x9-inch or 9x13-inch baking pan with butter or butter flavored non-stick cooking spray.
- Cream butter with mixer; margarine or spreads are not recommended.
- Add sugar and red pepper to the butter; cream with mixer until fluffy.
- Using a wooden spoon, stir in vanilla, almond extract, and eggs until just combined; do not overbeat; do not use mixer; overbeating results in brownies that rise too much during baking, and then fall as they cool.
- If spicier brownies are desired, add jalapenos.
- In a separate bowl, combine the flour, cocoa, cinnamon, and salt; adding ingredients separately to butter mixture can result in overbeating.
- Gently stir the dry ingredients into butter mixture; if desired add chocolate chips to the butter mixture with the dry ingredients; stir until combined.
- Spread mixture into prepared pan; if desired, evenly spread walnut pieces over the top of the batter.
- For a 9x9-inch pan, bake on center rack for 35 to 40 minutes; for a 9x13-inch pan, bake on center rack for 30 to 35 minutes.
- Cool on a wire rack and cut into squares.
BLONDE BROWNIES WITH WHITE CHOCOLATE AND CRANBERRIES

- Preheat the oven to 350 degrees F. Line an 8x8x2-inch baking pan with Reynolds Wrap® Aluminum Foil.
- Whisk together flour and baking powder.

BLUEBERRY BROWNIES
I had this idea to modify a brownie recipe - and it worked! I substituted all of the chocolate in a brownie recipe with a condensed blueberry syrup I made using fresh blueberries. It retains the brownie texture, although it is a little more cake-like. But, the surprising thing was that it tastes really good! I adjusted the sugar and added cinnamon. The cake is deep purple all the way through. This was a neat experiment!

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 8-inch square baking pan.
- Cook 2 cups blueberries in a large saucepan over medium heat. Add cinnamon and stir. Smash berries gently using a fork or a potato masher, being careful that hot juices do not splash back. Cook until most of the liquid has evaporated and you have a thick syrup, 8 to 10 minutes.
- Remove blueberries from heat and stir in butter to melt. Add sugar and stir to combine. Pour in eggs when mixture has slightly cooled, 1 at a time, mixing well after each addition. Pour in vanilla extract and stir to combine. Fold in walnuts. Fold flour gently into mixture. Beat well, 60 to 80 strokes, adding up to 1/4 cup additional flour as needed if batter seems too wet. Add remaining 1/2 cup blueberries and stir to combine.
- Pour batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Let cool completely before cutting and serving.

- Preheat the oven to 350°F (180°C). Grease a 8-inch (20 cm) square baking dish with nonstick spray and line with parchment paper. Let the parchment hang over 2 sides of the pan for easy removal.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, whisk together the butter and brown sugar until smooth. Add the egg and vanilla and whisk to combine. Stir in the dry ingredients until just combined, then fold in 1 cup of blueberries.
- Transfer the batter to the prepared pan and smooth the top. Gently press the remaining ½ cup (50 g) blueberries into the top of the batter.
- Bake for 30-40 minutes, until a toothpick inserted in the center comes out clean. Let the blondies cool for 15-20 minutes before removing from the pan and slicing.

SPICY WHITE CHOCOLATE-BLUEBERRY BROWNIES
A spin-off of my White Chocolate-Blueberry Brownies with Almonds. This brownie leaves you with that particular lingering heat you can only get from cayenne! For a tropical island twist, these are also very good if you substitute a small can of crushed pineapple or 1 diced ripe banana for the berries and use coconut or macadamia nuts instead of the walnuts.

A yummy white chocolate brownie recipe I came up with using things I had on hand. They are dense and chewy inside with a crunchy, glossy top. Sweet, but not tooooo sweet :) **I also made a version subbing pineapple for the blueberries, walnuts for the almonds, and rum for the vodka. **You could substitute any combination of fruits, nuts, and spirits. For example, sweet dark cherries, kirsch and almonds would be a nice Swiss twist.
