CHICKEN AND STEAK KEBABS

Chicken and Steak Kebabs image

Steps:

  • In a small bowl, whisk together the olive oil, taco seasoning and lime juice.
  • Place the beef in one bowl, the chicken in another bowl and combine the peppers, tomatoes and onion in a third bowl. Divide the marinade among the three bowls and toss to coat.
  • Preheat a grill for cooking over medium-high heat. Thread the ingredients onto 15 soaked wooden or bamboo skewers, alternating pieces of beef or chicken with pepper, tomato and onion. (Keep the beef and chicken on separate skewers, as they have different cooking times.) Lightly oil the grill grates. Grill the kebabs, turning once, until cooked to desired doneness, about 6 minutes total for the beef kebabs and 8 to 10 minutes total for the chicken kebabs.
  • Serve with warmed soft tortillas, sour cream and fresh cilantro.

1/4 cup olive oil, plus more for oiling grill grates
One 1.25-ounce packet taco seasoning
Juice of 1 lime
1 pound beef sirloin, trimmed and cut into 1-inch cubes
1 pound boneless, skinless chicken breast, cut into 1-inch cubes
30 shishito peppers or 2 bell peppers, cut into 1-inch pieces
30 cherry tomatoes
1 red onion, cut into 1-inch pieces
Soft corn or flour tortillas, warmed, for serving
Sour cream, for garnish
Chopped fresh cilantro, for garnish

Bourbon-Mustard Steak Kebabs image

Steps:

  • Make the marinade: Heat the vegetable oil in a small saucepan over medium heat. Add the thyme, garlic and 1/2 teaspoon pepper and cook, stirring occasionally, until the garlic is softened, about 4 minutes. Remove from the heat, carefully add the bourbon and then return to the heat. Simmer until reduced by more than half, about 5 minutes. Pour into a large bowl; whisk in the brown sugar, mustard and 1/2 teaspoon salt. Let cool to room temperature.
  • Add the steak to the bowl, toss well and let marinate in the refrigerator 2 to 6 hours.
  • Soak twelve 8- to 10-inch skewers in water for 30 minutes to prevent scorching. Preheat a grill to medium high. Drain the steak, discarding the garlic and thyme. Thread the steak and red onion onto the skewers. Season all over with salt and pepper.
  • Oil the grill grates. Grill the kebabs, turning occasionally, until the onion and steak are well charred, 4 to 7 minutes for medium doneness.

  • In a large bowl, combine first six ingredients. Add beef; turn to coat. Cover and refrigerate 8 hours or overnight., On 12 metal or soaked wooden skewers, alternately thread beef and vegetables; discard marinade. Steak Kebabs with Quesadillas image

Steps:

  • Preheat a grill to medium high. Make the salsa verde: Pulse 1 3/4 cups cilantro, the scallions, lime juice, vinegar, Worcestershire sauce and a large pinch each of salt and pepper in a food processor until slightly chunky. With the motor running, pour in the olive oil and puree until combined, scraping down the sides of the processor as needed. Season with more salt and pepper.
  • Poke the steak all over with a fork to tenderize it, then cut into 1-inch cubes; toss with 2 tablespoons of the salsa verde and season with salt and pepper. Thread onto eight metal skewers, finishing each skewer with a lime wedge; set aside.
  • Tear off a 16-inch piece of foil. Place 1 tortilla on the left side of the foil; top with the cheese and the remaining 1/4 cup cilantro, then sandwich with the other tortilla. Fold the right side of the foil over and seal the edges to form a packet.
  • Brush the grill grates with olive oil. Grill the kebabs, turning occasionally, 4 to 6 minutes for medium rare. Transfer to a plate and let rest. Meanwhile, grill the quesadilla until the cheese melts, about 2 minutes per side; unwrap and cut into wedges. Serve the kebabs in the lettuce leaves with the remaining salsa verde, the quesadilla wedges and mango slices.

Steps:

  • Preheat a grill to medium high and brush the grates with vegetable oil. Put the potatoes in a microwave-safe bowl, cover and microwave until just tender, about 5 minutes. Toss the beef with the olive oil in a large bowl and season with salt and pepper. Thread the beef, potatoes and asparagus onto eight 10-inch skewers.
  • Combine the ketchup, mustard, vinegar, 2 tablespoons water, the Worcestershire sauce, steak sauce and red pepper flakes in a small bowl. Grill the kebabs, turning occasionally, until marked, about 6 minutes for medium rare. Serve with the sauce.

Honey-Steak Kebabs image

Steps:

  • Combine marinade, pour over beef and stir to coat. Cover with plastic wrap and refrigerate 1-2 hours, stirring occasionally.
  • Remove beef and discard marinade. Using 4 10-inch metal skewers (or use wooden skewers that have been soaked in water for a couple hours), alternately thread beef and vegetables.
  • Broil or grill 2 inches from heat, turning 2 or 3 times until meat is cooked to 160° and vegetables are lightly browned, about 10 minutes.
  • This also can be baked at 350 for 45 min (ovens vary). Place skewered meat and vegies on a foil lined sheet pan and turn 3-4 times during baking time.
