- In a shallow bowl, combine flour, garlic powder, onion powder and pepper. In another bowl, combine cheese and buttermilk. Place bread crumbs in a third shallow bowl., Flatten chicken to 1/4-in. thickness. Coat chicken with flour mixture; dip in buttermilk, then coat with crumbs. In a skillet over medium heat, cook chicken in oil for 5-7 minutes on each side or no longer pink.

"STEAMED" CHICKEN CUTLETS IN PACKAGES
This creates a great aroma when the packages are first opened at the table--the packages hold the flavors in the chicken. I'm a huge chicken fan, and this is a very simple but tasty way to serve it.

Steps:
- Preheat oven to 450°F.
- Rinse the chicken breasts, and either cut or pound the chicken to create cutlets of about equal size.
- Tear off squares of aluminum foil (enough to wrap around the chicken and then some) and place each chicken breast on a square.
- Slice the tomato (es) and place a slice or two atop of each breast.
- Drizzle the chicken with the olive oil.
- Sprinkle the basil on top of the chicken breasts evenly.
- Add salt and pepper to each breast.
- Loosely fold up the foil over each cutlet, leaving both room for air space but folded up enough not to allow oil to drip out.
- Place all packages in a large baking dish and bake for 20 minutes.
- Serve while still packaged; allow each diner to open his/her package at the table.

TEX MEX CHICKEN CUTLETS
A quick and easy dinner, great for the summer does not heat up your kitchen. This is not a very spicy dinner if you like it spicy feel free to change the spices. Also if you use a thick chicken breast you will need to pound it or adjust the cooking time.

Steps:
- Heat the oil in a large non stick skillet over medium high heat. Add onion and garlic, saute, stirring occasionally for about 2 minutes or until softened.
- Place flour on a plate. Place chicken in flour to coat each side, patting off excess. Add to skillet, saute for 2 minutes per side or until lightly golden. Add cumin, chicken broth, vinegar, salsa and corn. Cook for about 4 minutes. The chicken should almost be done unless your using a thick boneless breast then you will have to adjust your cooking time. Remove from heat. Stir rice into liquid. Cover and let stand 8-10 minutes or until the rice is tender. Serve with extra salsa and sour cream if desired.

- Flatten chicken to 1/2-in. thickness. In a shallow dish, combine the bread crumbs, Parmesan topping, wheat germ, basil and garlic powder. Place the yogurt in another shallow dish. Dip chicken in yogurt, then coat with the crumb mixture. , Place in a 15x10x1-in. baking pan coated with cooking spray. Spritz chicken with butter-flavored spray. Bake, uncovered, at 350° for 20-25 minutes or until the juices run clear.
