MAUIGIRL'S SMOKED SALMON STUFFED PEA PODS
These are a cute and fresh idea for an appetizer or as a pretty addition to a festive vegetable tray. I used to steam the pea pods, but this uncooked method yields a nicer look without all the fuss.

Steps:
- Split each snow pea down one seam.
- Mix cream cheese, smoked salmon, garlic salt, and pepper in a bowl until smooth. Spoon salmon mixture into a pastry bag fitted with a star tip. Pipe mixture into the center of each snow pea pod, creating a scalloped edge. Sprinkle dill weed over cream cheese filling.

- Place the pea pods and water in a microwave-safe bowl; cover and cook on high for 3-5 minutes or until crisp-tender. Meanwhile, in a small skillet, cook onion in 2 tablespoons butter over medium heat until crisp-tender., Drain peas; add to onion mixture. Add salt, pepper and remaining butter; toss to coat. Cook and stir until heated through.

TARAMOSALATA-STUFFED SNOW PEA PODS
I used to stuff snow peas with an herb, cream cheese mixture and then my Greek sister-in-law came up with this great idea. It's very, very good. 1 hour chilling.

Steps:
- In blender or food processor fitted with steel blades, place carp-roe caviar and cold water.
- Blend briefly.
- Add breadcrumbs and lemon juice and blend briefly again.
- Trickle in oil very slowly while blending.
- When mixture is thick and oil is used up, add onion, garlic and dill and blend until smooth.
- Adjust seasoning, seeing if it needs some salt and add pepper to taste.
- Set aside.
- Steam snow peas about 3 minutes, until they puff up and turn bright green.
- Drain and run under cold water.
- When cool enough to handle, trim off stem end and strings.
- This will open peas.
- Fill a pastry tube with the taramosalata (the carp-roe spread) and pipe in about ½ to 1 tablespoon of it into each pea pod.
- Chill 1 hour.
- Serve cold.

STUFFED PEA PODS ALA MAGGIE
These impressive appetizers are from a recipe given to me many years ago by a friend that I tweaked a bit. They are pretty to look at and yummy. I save them for special occasions, since they are time-consuming to make. I usually remove pea pod strings and make filling the day before and stuff them the next day.

Steps:
- Rinse pea pods, then remove string at edge of each peapod to open, Remove peas from peapods and set aside in measureing cup.
- Wrap peapods in paper towels and refrigerate in plastic bag until ready to fill.
- Bring cream cheese to room temperature.
- If reserved peas do not measure 3/4 C, add frozen peas to make correct amount. Add peas to softened cream cheese, mayonnaise, Tabasco, garlic powder and salt and pepper. Mix well. Put a bit into a peapod, taste, and adjust seasonings to your liking.
- Chill filling until it appears easier to work with.
- Using a pastry tube or teaspoon, fill each peapod.
- Refrigerate to firm up filling, then serve on a pretty platter gaarnished with grape tomatoes, pineapple slices or whatever to "color it up".
