TUNA TARTARE
Steps:
- Cut the tuna into 1/4-inch dice and place it in a very large bowl. In a separate bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, hot red pepper sauce, salt, and pepper. Pour over the tuna, add the scallions and jalapeno, and mix well. Cut the avocados in half, remove the seed, and peel. Cut the avocados into 1/4-inch dice. Carefully mix the avocado into the tuna mixture. Add the toasted sesame seeds, if using, and season to taste. Allow the mixture to sit in the refrigerator for at least 1 hour for the flavors to blend. Serve on crackers.
SPICY TUNA FISH CAKES
Who needs crab and a deep fryer to enjoy these tasty delights? Tuna works great and a light pan searing does the job of cooking up this tasty treat without all the fat! Serve with hot sauce or mayonnaise.

- Place the potato into a small pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash the potato with a potato masher or fork in a large bowl.
- Mix the tuna, egg, onion, Dijon mustard, bread crumbs, garlic powder, Italian seasoning, cayenne pepper, salt, and pepper into the mashed potato until well-blended. Divide the tuna mixture into 8 equal portions and shape into patties.
- Heat the olive oil in a skillet over medium heat. Pan fry the tuna patties until browned and crisp, about 3 minutes on each side.

SUPER SIMPLE TUNA CAKES & TARTER SAUCE
this recipe will feed an elegant crowd or a hungry family. The idea to use stuffing came from a magazine article a few years ago, I kept tweaking it around and got this. I love it as a quick go-to dish when I have forgotten to thaw something for dinner, it's very pantry-friendly!

Steps:
- Mix all tuna cake ingredients together in a large bowl. Refrigerate for 10 minutes.
- While that's cooling, mix together all tarter sauce ingredients in a small bowl.
- Heat large nonstick pan to medium heat, or your electric skillet to 275 degrees. Add a dash of cooking oil or spray, if desired.
- Shape mixture into patties, will make 8 good sized patties or 10 medium patties.
- Cook each patty 3 minutes on each side or until golden brown (see photo).
- Cool and pat on paper plate or napkin, top with tarter sauce and enjoy!
SUPER SIMPLE TUNA CAKES
So one day I was craving some fish cakes, only problem was I didn't have the necessary ingredients to make one. So I came up with this recipe, and it was easy and bursting with flavor! I have been making them like this ever since. It has ingredients you already have on hand.

Steps:
- In a bowl, mix together tuna, cajun seasoning, garlic powder, bread crumbs and mayo together. If you feel it is too wet add more bread crumbs. I you feel it is too dry add more mayo.
- Add oil to skillet and heat on medium high heat.
- Grab mixture and form into patties about 1/2 inch thick.
- Place them in hot skillet and cook for about 5-7 min on each side depending on how big you made them.
- Once browned and cooked through serve with your favorite sauce and enjoy!

VERY SIMPLE TUNA CAKES
This is a very rich and easy tuna cake. You can change the canned tuna for chicken, salmon, crab. Whatever floats your boat.

Steps:
- Mix everything except the oil in a bowl.
- Make sure you taste the mix to make sure you like it and it's seasoned right.
- Scoop up a walnut sized ball, and flatten to about 1/2 inch thick.
- Put the patties in freezer.
- Heat oil in skillet
- When oil is hot take patties out and place in frying pan.
- Fry for 3 minutes on each side.
- Goes nicely with a salad =) Enjoy.
