SUSAN'S SWEET POTATO CASSEROLE

My mother-in-law's amazing sweet potato casserole recipe has everyone demanding them every year. We made a few slight modifications to make it a little less sweet so my husband could have marshmallows on top.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat mashed sweet potato, white sugar, eggs, milk, 3 tablespoons melted butter, vanilla extract, and salt together in a large bowl until smooth; spread ito a 9-inch square baking dish.
  • Bake in preheated oven until firmly set, about 45 minutes.
  • Mix chopped pecans, brown sugar, flour, and 1/4 cup melted butter together in a bowl until dry ingredients are evenly moistened; spread evenly over the sweet potato mixture and top with marshmallows.
  • Return dish to oven and bake until marshmallows are lightly browned, about 15 minutes.

MY GRANDMA'S CANDIED YAMS WITH PINEAPPLE

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

My Grandma's Candied Yams with Pineapple image

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds

The Best Candied Yams (Without Corn Syrup) Recipe image

Steps:

  • Preheat oven to 400 degrees.
  • Boil yams for 20 minutes in a large pot, or until they are easily pierced with a fork, and drain the water from the pot.
  • Spray a 9x13 inch baking dish with nonstick cooking spray and spread boiled yams inside.
  • Distribute small pieces of butter and cinnamon evenly over the yams.
  • Sprinkle brown sugar then miniature marshmallows over yams.
  • Bake in the preheated oven for 25 minutes, or until sweet potatoes are tender and marshmallows have melted.
