PORK QUESADILLAS WITH FRESH SALSA

I threw this together one night when I was in the mood for quesadillas but didn't feel like going out. The homemade salsa is so fresh and wonderful, you'll absolutely want to double the recipe. -Adam Gaylord, Natick, Massachusetts

Pork Quesadillas with Fresh Salsa image

Steps:

  • In a large skillet, heat oil over medium-high heat. Add peppers and onion; cook 4-5 minutes or until tender, stirring occasionally. Stir in pork, salt and pepper; heat through. Meanwhile, in a small bowl, combine salsa ingredients. , Place tortillas on a griddle. Layer one-half of each tortilla with 1/4 cup cheese, 1 cup pork mixture and 2 tablespoons cheese; fold other half over filling., Cook over medium heat 1-2 minutes on each side or until golden brown and cheese is melted. Cut into wedges. Serve with salsa.,

1 tablespoon olive oil
1 each small green, sweet red and orange peppers, sliced
1 medium red onion, sliced
3/4 pound thinly sliced cooked pork (about 3 cups)
1/4 teaspoon salt
1/8 teaspoon pepper
SALSA:
2 medium tomatoes, seeded and chopped
1 tablespoon chopped red onion
1 tablespoon minced fresh cilantro
2 teaspoons olive oil
1 to 2 teaspoons chopped seeded jalapeno pepper
1 teaspoon cider vinegar
1/8 teaspoon salt
Dash pepper
QUESADILLAS:
4 flour tortillas (10 inches)
1-1/2 cups shredded part-skim mozzarella cheese

These Sweet Pork Quesadillas are one of my all-time favorite foods. I just can't get enough of them!

Sweet Pork Quesadillas image

Steps:

  • Put the pork in the slow cooker, and fill with water until it reaches halfway up the roast.
  • Cook on high for 3 hours.
  • Drain the water and cut the pork in thirds.
  • Mix together salsa, Dr. Pepper, and brown sugar and pour over the pork.
  • Cook on low for 3 more hours.
  • Drain the liquid (reserving just a little bit to mix with the pork) and shred the pork. Mix the shredded pork with the reserved liquid.
  • Heat a nonstick griddle or pan to medium heat, place a tortilla on the heated griddle.
  • Sprinkle on about 1/2 cup cheese and a 1/2 cup pork and place a second tortilla on top.
  • Cook for 3 to 5 minutes, or until tortilla is golden brown, turning over halfway through.
  • Serve with optional toppings.

2 pound pork roast (you can use shoulder, butt, or loin)
8 ounces chunky salsa
1 (12 ounce) can Dr. Pepper soda
1 cup brown sugar

3 cups shredded Colby Jack Cheese (divided)

Pork-Sweet Potato Quesadillas image

Steps:

  • Preheat the oven to 200 degrees F. Pierce the sweet potato a few times with a fork and microwave until soft, 7 to 10 minutes. Let cool slightly, then remove the skin and mash the flesh with a fork; set aside.
  • Heat 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the pork, chile powder and 1 teaspoon salt and cook, breaking up the meat, until browned, about 3 minutes. Add the garlic, sweet potato and scallions and cook, stirring, 2 more minutes. Add the cilantro and season with salt. Transfer the mixture to a bowl.
  • Wipe out the skillet; add 1/2 tablespoon butter and melt over medium-high heat. Add a tortilla, spread one-quarter of the pork mixture on one half and top with 1/2 cup cheese. Fold the tortilla over the filling and cook until the quesadilla is golden, 1 to 2 minutes per side. Transfer to a baking sheet and place in the oven to keep warm. Repeat to make 3 more quesadillas. Cut into wedges and serve with pickled jalapenos and sour cream, if desired.

1 medium sweet potato

Steps:

  • Use garlic and salt to make a paste. In a small bowl, combine with 1/4 teaspoon pepper and the oil. Rub all over pork.
  • Heat grill to high; oil grates. Place pork on hottest part of grill; cover. Cook, turning occasionally, until an instant-read thermometer inserted in thickest part registers 155 degrees. 10 to 20 minutes. Let rest 5 minutes; thinly slice across the grain.
  • Meanwhile, place onion slices on cooler part of grill; cover. Cook, turning once, until soft and beginning to brown, about 10 minutes. Reduce grill to medium-low.
  • Spread 1 tablespoon mustard on each tortilla, leaving a 1/2-inch border. Dividing evenly, layer half of each tortilla with ham, pork, onion, pickles, and cheese. Fold tortillas; press to close.
  • Lightly oil grates. Place quesadillas on grill; cover. Cook, turning once, until browned in spots and cheese has melted, about 4 minutes. Cut into wedges; serve immediately.

Sweet Pulled Pork Quesadillas image

Steps:

  • 1. To make sweet pulled pork, place most of the onion on the bottom of the crock pot, add pork roast, then montreal steak seasoning, lime juice, and rest of onion slices. Cook in crock pot until pork falls apart easily with fork. Add sugar, and "shred" (pull apart with fork.) You can adjust seasonings by adding, garlic, chili powder, cumin, oregano, and smoke flavor, but once when I was in a super rush, I did just the ingredients listed in the recipe, and it turned out plenty tasty. I free-handed the Montreal steak seasoning...you can always go light and add more once it is cooked, to taste. (Now that I've measured a few times 2 -2 1/2 Tbsp. seems right.)
  • 2. To make quesadillas, in large skillet, cover a whole tortilla with shredded cheddar. Then layer over half the tortilla the sweet pork, black beans, & quinoa/rice. Heat over medium heat until bottom of tortilla is nicely brown and crispy and cheese is well melted.
  • 3. Add dollops of the yogurt like you would sour cream, then sprinkle with shredded cabbage. Fold tortillas in half. Done!
  • 4. The pork meat is great filling also for tamales or in enchiladas, or simply with chips and other Mexican style toppings. But my favorite is the quesadillas! If I have roasted pumpkin (or squash) and onions on hand, I add them to my quesadillas.
  • 5. * when cooking the quinoa, dry toast it first in a skillet or pot, until it starts to pop and smell like popcorn, before cooking with water like normal. This makes ALL the difference in the flavor.

some sweet pulled pork
some shredded cheddar cheese
some cooked quinoa* (or brown rice)
1 can(s) black beans, rinsed
some unsweetened plain fat free yogurt (may add chopped onion or bit of canned chipolte in adobo sauce, if you want)
some sliced/shredded white cabbage
some flour tortillas

  • If using the onion and jalapeños, add 2 tablespoons of canola oil to a large pan over medium-high heat. Add the onion and jalapeño and sauté 4-6 minutes, or until softened. Transfer the vegetables to a bowl and set aside.
  • Wipe the pan clean and place over medium-low heat. Add a light drizzle of oil to the pan and allow to come to temperature.
  • Carefully, place 1 flour tortilla on the pan and scatter about a 1/4 cup of shredded cheese over the entire tortilla. Then, to only one half of the tortilla, add about a 1/3 cup pulled pork, followed by a light sprinkle of the vegetables, if using.
  • Once the cheese starts to melt (about 1 minute), use a spatula to fold the side with cheese only over the pulled pork filling. Hold the quesadilla down with your spatula until the filling has melded together, about 30 seconds to 1 minute more.
