INSTANT POT® SWEET AND SOUR PORK
Sweet and sour pork is a traditional and delicious Chinese dish. There's no need for takeout when you can make it with very little effort at home, and even better, in the Instant Pot®. Serve with rice.

Steps:
- Turn on a multi-functional pressure cooker (such as an Instant Pot®) and select Saute function. Add oil and heat until hot. Add pork cubes, working in batches if necessary, and cook until browned on all sides, about 5 minutes. Return all the pork back to the pot and cancel Saute mode.
- Whisk together 3/4 cup water, ketchup, rice vinegar, pineapple juice, brown sugar, soy sauce, ginger, and garlic in a small bowl. Pour over pork and stir to combine.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure using the quick-release method. Unlock the lid and remove. Transfer pork to a plate using a slotted spoon. Cover with foil to keep warm.
- Select Saute mode and stir in onion, pineapple, and red and green bell peppers. Simmer until vegetables start to soften, 6 to 7 minutes.
- Whisk together cornstarch and remaining 1/2 cup water in a small bowl until smooth. Pour slurry into the pot. Cook, stirring constantly, until sauce has thickened to your preferred consistency, about 2 minutes. Return cooked pork back to the pot and heat until just warmed through. Garnish with sesame seeds.

SWEET AND SOUR VENISON STEW
This a very simple recipe my Wife came up with about 30 years ago. We were both avid outdoor folks. Fishing, Hunting, Camping. The medical problems started. I still hunt and fish when possible. Everyone we ever served this to polished the bowl and went looking for the pot. ENJOY You can use any meat but it was originally made for Venison.

Steps:
- Cut the Venison into bite size pieces and brown in skillet with a little oil of choice. We use Bacon fat.
- Mix the rest of the ingredients and add to the meat in a cast iron pot.
- Bring up to a boil and reduce heat and simmer for one and a half to two hours or till done. Adding water or Wine as needed.
- This goes very good over Broad Noodles.

- Combine flour, salt and pepper in bag; add meat pieces and shake to coat.
- In lg skillet, brown meat in hot oil.
- Drain.
- Mix water, catsup, brown sugar, vinegar and worcestershire sauce.
- Stir into the meat.
- Add the onion.
- Bring to a boil, reduce heat and simmer for 30 minutes.
- Add carrots and simmer for another 30 minutes.
VENISON STEW

- In a large pot, over high heat, add the olive oil. In a mixing bowl, toss the venison with flour and Essence. When the oil is hot, sear the meat for 2 to 3 minutes, stirring occasionally. Add the onions and saute for 2 minutes. Add the celery and carrots. Season with salt and pepper. Saute for 2 minutes. Add the garlic, tomatoes, basil, thyme, and bay leaves to the pan. Season with salt and pepper. Deglaze the pan with the red wine. Add the brown stock. Bring the liquid up to a boil, cover and reduce to a simmer. Simmer the stew for 45 minutes to 1 hour, or until the meat is very tender. If the liquid evaporates too much add a little more stock.
- Remove the stew from the oven and serve in shallow bowls with crusty bread.
- Combine all ingredients thoroughly.

VENISON STEW
Steps:
- Chop the salt pork into chunks and render it down in a pan until it's crispy like bacon.
- Split the venison shank into 2 large pieces, and then chop the venison ham meat and shank into large chunks. Add the venison to the salt pork in the pan and brown the meat, about 10 minutes. While browning, add the garlic powder, chile flakes and sprinkle with salt and pepper. Next, add 2 tablespoons of the flour to the meat and mix it in to form a sort of gravy. Remove the meat and set it aside.
- Add the oil, butter and remaining 4 tablespoons flour to the empty pan and cook over medium heat to form a roux. Stir, and allow the roux to cook until it changes color from tan to brown.
- Add the beef stock and 2 cups water to the roux and bring it to a boil. Then add in the venison meat and cook it for 5 to 10 minutes, until the meat is three-quarters of the way cooked. Finally, add in the potatoes, oregano, peppercorns, bay leaves, carrots, celery and onions. Cook this until the meat falls off the shank bone, about 1 hour.

- Brown venison steaks in vegetable oil.
- Place steaks in baking dish. Combine next five ingredients and rub over steaks. Bake at 400 degrees for 40 to 50 minutes, basting with drippings every 10 minutes.
- While steaks are baking, during last 10 to 15 minutes, combine all remaining ingredients except the rice in a skillet. Bring to a boil, add rice, cover and reduce heat to low for 5 minutes.

- In a dutch oven brown meat well in hot oil.

SWEET AND SOUR SAUCE

- Heat a wok or saucepan over high heat and add the oil. When the oil is hot, add the ginger and garlic. Stir-fry just until fragrant, and then add the juice, vinegar, brown sugar and soy sauce. Bring to a boil and cook until the sugar has dissolved. Stir in the cornstarch and water mixture and cook until thickened, about 1 minute. Stir into any nearly completed stir-fry dish and bring to a boil until the sauce thickens, about 1 minute.

I found this recipe in a Life magazine a few years ago. As the article says, it is just as good with a glass of wine and guests as it is with a cold beer in front of the TV.

Steps:
- Season meat with S/P. Heat 3-4 quart saute pan over med-high heat. Add 1 tablespoons EVOO, and swirl to coat the bottom of the pan. When the oil is hot, add the meat and brown it deeply on all sides (7-10 minutes). Remove from heat and let sit on a plate.
- Add remaining oil, onions, carrots, celery and garlic cloves. Saute stirring frequently, until veggies are just beginning to soften (about 4 minutes).
- Return meat to the pan, and add broth, potatoes, basil and bay leaf. Bring broth to a boil, then reduce heat to med-low. Add wine. Let simmer for 10 minutes, then reduce heat to low.
- Cook over low heat for 3 hours. Taste periodically, add S/P if needed. After removing heat, discard bay leaf, and serve hot.

- Place tofu between 2 plates. Place a weight on the top plate to press water out of tofu. Let sit, draining off water occasionally, 1 to 2 hours.
- Slice tofu into chunky, bite-sized pieces.
- Heat oil in a large skillet over medium-high heat. Saute tofu until golden, about 5 minutes. Remove tofu and set aside.

SWEET-SOUR BEEF STEW
A recipe from my childhood; Mom found it in a Better Homes and Gardens recipe book from 1977. I prefer the crockpot method, but if you don't have one, you can make this on the stove. There is a note in the cookbook that says she used this recipe to make pot roast in the Crockpot as well.

- Brown meat, half at a time, in hot oil.
- (If cooking on stove top add the next 8 ingredients (carrots through salt). Cover and cook over low heat for 1½ hours or till meat is tender.)
- If using Crockpot, drain and transfer meat to Crockpot.
- Add shredded carrot, sliced onion, tomato sauce, ½ cup water, brown sugar, vinegar, Worcestershire and salt. Stir.
- Cook on high for 6-8 hours.
- For both stove top and Crockpot methods, at the end of the cooking time add the blended cornstarch and water. Cook and stir until thickened.
- Cook noodles according to package directions. Serve stew over noodles sprinkled with poppy seed (if using).
