- Melt butter in a saucepan; stir in flour, salt, mustard and pepper until smooth. Gradually add milk and onion; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in ham, peas and eggs. Pour into an ungreased 8-in. square or 11x7-in. baking dish. On a floured surface, roll pastry to fit top of dish; place over filling. Seal and flute edges; cut slits in the top. Bake at 425° for 25 minutes or until crust is golden brown and filling is bubbly.

EASY HAM AND SWISS CASSEROLE
This casserole is perfect comfort food for the day after a holiday when you have leftover ham but don't feel like cooking! This is great served with broccoli, asparagus or a salad!

- Preheat an oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
- Combine the cream of mushroom soup, white wine, and water in a large bowl. Stir in the cooked egg noodles, ham, and Swiss cheese. Pour the mixture into the prepared baking dish. Sprinkle the dry stuffing mix over the dish. Bake uncovered until the casserole is bubbling and browned, about 30 minutes.

- Preheat oven to 400F (205C).
- Grease 10" pie plate.
- Sprinkle ham, cheese and onion in plate.
- Place remaining ingredients in blender and beat on HIGH until smooth (about 15 seconds).
- Pour into plate.
- Bake at 400F (205C) for 35 to 40 minutes, or until golden brown and knife inserted in center comes out clean.
- Allow to cool for 5 minutes.

HAM AND SWISS ASPARAGUS PIE
This recipe is in memory of my daugher Tammy. I gave her this a while back after I tried it, and it bcame a hit with her and all of her friends.

Steps:
- Heat oven to 350 degrees F. Grease 9-inch deep-dish pie pan or 9-inch square pan. cook spaghetti to desired doneness as directed on package. Drain; rinse with hot water.
- In large bowl, combine cooked spaghetti, Parmesan cheese, butter and 2 eggs; toss lightly. Press evenly over bottom and up sides of greased pan to form crust. Spread ham chunks over crust. Top with asparagus spears and mushrooms; sprinkle with with Swiss cheese. In small bowl, combine 2 eggs, sour cream, dill weed and chives; beat well. Pour over cheese.
- Bake at 350 degrees for 35 - 45 minutes or until crust is golden brown and a knife inserted near center comes out clean. Let stand 15 minutes before serving. 6 to 8 servings.
- You may substitute leaner ham to eliminate some of the salt.
DEE DEE'S SWISS HAM & POTATO POT PIE
Pot pie of any kind has been a favorite for as long as I can remember. Comfort food at best! And a great way to use up leftover ham during the holidays. There is just something about ham, swiss cheese, potatoes and cream that I love with a pinch of nutmeg. Nutmeg is optional but in my opinion adds to this dish. Hope you enjoy!

- 1. Preheat oven to 350 degrees. Grease or spray appropriate size baking dish with cooking spray such as PAM. I used a 9 X 9-in deep baking dish.
- 2. Over a medium/low heat melt butter in large skillet; add onions. Cover and cook for 5 minutes. Add potatoes, carrots & celery; stir, cover and cook an additional 10 minutes.
- 3. Increase heat to meduim; stir in flour and then add chicken stock. Stir until mixture thickens; remove from heat and then stir in cream, ham and swiss cheese. Season to taste. Go light on the salt (if you use it at all) as the ham is salty. Nutmeg is optional but adds a great flavor. Pour into prepared baking dish.
- 4. Roll pastry out to size of dish; lay on top of ham and potato mixture. Brush top with milk. Cut a few slits in pastry.
- 5. Bake for 35 to 40 minutes until pastry has puffed and lightly browned.
