GROUND TURKEY TACO MEAT
This recipe has fewer calories because of the ground turkey and amazing flavor! It is a little spicy, but our family enjoys it this way. Because it has so much flavor, you cannot even tell it's not ground beef. It tastes great as a topping on baked potatoes as well as tacos. Enjoy!

- Mix chili powder, cumin, paprika, salt, garlic powder, onion powder, oregano, and cayenne together in a small bowl.
- Cook turkey in a large nonstick skillet over medium heat, stirring to break up clumps, until no longer pink, 3 to 5 minutes. Stir in chili powder mixture and water. Reduce heat and simmer, stirring occasionally, until most of the liquid has been absorbed, about 10 minutes.
- Stir cider vinegar and brown sugar into the skillet. Simmer until flavors combine, 3 to 4 minutes. Transfer to a serving bowl.

- In a skillet, cook turkey over medium heat until no longer pink; drain. Add taco seasoning and water; cover and simmer for 10 minutes. Spoon turkey onto a 12-in. serving plate or pizza pan. - Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Add red bell peppers, onion, and jalapeno pepper; saute until onion is just translucent, about 5 minutes.
- Mix salsa, sour cream, and taco seasoning together in a large, oven-safe casserole dish. Add the turkey mixture and processed cheese. Mix well. Top with Cheddar cheese.

TACO DIP WITH GROUND TURKEY
I came up with this recipe for a party and it has gotten rave reviews every time I make it. I originally started out with ground beef, but have switched to turkey because it's healthier, it doesn't have to be drained, and with the taco seasoning, you can hardly tell the difference anyway! I do not recommend fat free cheddar cheese as it does not melt as easily, and it can make it more difficult to get through all of the layers with the tortilla chips.

- Preheat oven to 350°F.
- Cook ground turkey in frying pan until completely cooked through. Drain if necessary. Add taco seasoning and stir until seasoning is evenly distributed throughout.
- In a 2 quart casserole dish or aluminum baking tin, spread cream cheese to cover the bottom of the dish evenly.
- Layer turkey evenly, followed by 1/2 of the shredded cheddar cheese. Layer salsa on top of cheese, and cover with the remaining 1/2 of cheese.
- Bake uncovered in oven for approximately 20-25 minutes, or until the cheese is melted.
- Let stand for 5 minutes and serve with tortilla chips.

- Heat oil in a large saute pan over medium-high heat. When oil shimmers, add onion and cook until onion becomes translucent. Add turkey and cook, breaking up meat with the side of a spoon, just until meat is cooked through, 3 to 4 minutes.

- In a large frying pan, add 2 tsp of olive oil and heat over medium heat. Add the ground turkey to the pan. Top the ground turkey with 1/4 tsp salt, 1/4 tsp ground pepper, a pinch of red pepper flakes, 3/4 tsp chili powder, 3/4 tsp garlic powder, 1/8 tsp cumin, 3/4 tsp paprika, 1/2 tsp onion powder, 1 tsp dried parsley, and 1/2 tsp oregano. Mix the spices into the ground turkey while breaking the turkey up into smaller pieces. Add 3 Tbs tomato paste, and 2 Tbs hot sauce to the ground turkey and mix. Then move the ground turkey in the pan so that it fills only 1/2 of the pan, put the diced red pepper so it fills the other half of the pan.
- Pour the Magic Ground Turkey Taco mixture into an 8 in x 8 in pan and even it out with a spatula. Heat the refried beans in the microwave and evenly spread on top of the meat with a spatula. Add the salsa on top of that and spread it out evenly with a spatula. Pour the guacamole on top, and spread it out evenly with a spatula. Then, sprinkle the shredded lettuce on top of the guac layer. Next add the olives. Lastly add your queso layer and evenly spread it out with a spatula.
